Pushed with beer gas (75/25 blend of nitrogen and carbon dioxide), which allows high pressure without excess carbonation. The beer is forced through a plate with a few tiny holes, knocking most of the gas out of solution. It then takes some time to settle, but the result is a gorgeous head. The video is 4X speed, 60 seconds compressed to 15.
The beer itself is an oatmeal stout with meadowfoam honey (which provides a light marshmallow flavor).
The glass is a thistle (traditional Scottish form) from Cristal Blumenau in Brazil.
