A fellow sactowner, I used to live in Roseville and South sac off florin but that was over 20 years ago. I drove truck for mad dog express back in the day. I miss that town, it was a fun place.

I know you probably dont want to say where or who this place is but would like to know a bit more. It cant be just some old bar place I dont think. The kitchen is too neat, clean, organized looking. It appears though that you work by yourself and cover every responsibility in the kitchen. So the food orders must be on the lower end of volume.

It's a local gaming tavern in Vegas, they're in abundance around town off the strip. It's lower volume cooking just to support the bar and gamblers and we keep it clean. Weekends are busier and usually there's 2 cooks but the guy I work with is out right now. Along with cooking we do the prep, cleaning, dishes, trash and mopping. Mellow gig for the most part.

I thought I had a video of it but can't remember now. It's basic tho, a pound or 2 of noodles of your choice, boil and strain. In the same pot put a stick of butter, about a cup or 2 of milk, and 2+ pounds of Colby jack cheese and stir up on mid low heat till its a thick goop, add salt and pepper (tbsp of salt maybe and i like alot of pepper)to taste as you wish then add noodles back in and stir. It should be super thick and stringy not loose and milky. When it's stirred up let it rest for a bit then dig in. My dad made it when I was a kid and called it heart attack in a pan, simple but so good. More cheese the better, it'll seem like alot but it works.
