Ingredients:
To marinate mutton(for 2 hours)
Mutton-1 kg
Medium Size Onion - 1 (sliced)
Turmeric Powder - 1 tsp
Red Chilli Powder - 1 tbsp
Kashmiri Red Chilli Powder - 1 tbsp
Coriander Powder - 1 tbsp
Biriyani Masala - 1 tbsp
Salt - 1.5 tsp
Lemon - 1
Oil - 4 tbsp
Paste of (Ginger - 2 inch + Garlic - 15 cloves + Green Chilli - 3)
To cook the mutton
Oil - 7 tbsp(same oil for making fried onions and mutton)
Large Onion - 3(fine slices)(2 onions for making birista(fried onion) and 1 onion for cooking mutton)
Bay Leaf - 1
Black Cardamom - 1
Green Cardamom - 2
Cloves -2
Black Pepper Corns - 3
Cinnamon - 2 inch
Few Mint Leaves + Coriander Leaves - 1 tbsp
Water - 1/2 cup(150 ml appox
Curd - 1/2 cup
For Rice
Staranise - 1
Bay Leaf - 1
Green Cardamom - 2
Cloves -2
Salt - 2 tbsp
Basmati Rice - 500gm (soaked for 2 hours)
For layering
Saffron - 2 pinch + Milk - 6 tbsp + Kewra Water - 1 tbsp + Rose Water - 1 tbsp
Biriyani Masala - 2 tsp
Fried Onion
Few Mint & Coriander Leaves
Slitted Green Chilli
Biryani Masala,Clarified Butter(Ghee) - 2 tbsp
Boiled Rice Water - 1/2 cup(100 ml appox)
