There is a lot of information on the internet which may depict the 'best' knives and sharpening methods. I thought I should present my views to keep the discussion balanced.
Here are some extra ideas that did not get mentioned:
-It is perfectly OK to hone your knife with a stone using a circular motion. This may be the most practical way to use a small 'pocket' sharpening stone.
-Crockery plates and mugs may often have an unglazed area (or ring) on the underside. This is a ceramic abrasive and can be used to help sharpen a knife. The abrasive is fairly fine so it is not the best thing to restore a really blunt edge, but it can bring a reasonable edge to razor sharpness.
-Heavy, thick blades may look good and be a preferred choice for chopping, but for meat, fish and vegetable processing and other general tasks a thinner blade is likely to be a better option. The thinner blade offers less resistance when slicing deeply, and there is less material to remove when re-grinding the edge.
-It is useful to think that cutting takes place when sufficient pressure is applied. Pressure can be defined as force per unit area.... like pounds per square inch. Water can be used to cut even though we mightn't think of it as 'sharp'... but a fine stream of water pushed through a small nozzle at 50,000 pounds per square inch might cut your fingers off. When a blade has a serrated edge (or even virtually invisible serrations created by coarse grinding), then when just one or two serrations are in contact with the material to be cut, then the pressure at those few points may be considerably higher than the total pressure when a long blade is in full contact.
-Big guards and some handles may make it more difficult for a knife to be secured in a sheath. I like handles like the blue one on the Victory knife in the video. It slides into a pouch nicely, it is easy to see if dropped in the scrub, it is relatively hygienic... and it can be gripped securely.
