Today I will tell you about praline and show my recipe for its preparation.
Praline is a paste made from any caramelized nuts. To prepare it, we need only two ingredients: nuts and sugar. You can take absolutely any nuts to your taste - almonds, hazelnuts, walnuts, peanuts or their mixture (as in our case).
The ratio of nuts to sugar is also arbitrary. I have 150 grams of nuts and 350 grams of sugar. If using caramelized nuts for garnish, I prefer to use fewer nuts and more sugar (100g / 400g).
Chopping nuts is voluntary BEFORE caramelization is voluntary. But remember that with whole nuts, a low-powered appliance like a home coffee grinder or blender just won't do it. You risk burning your appliances and ruining your mood.
The color of the caramel, and therefore the praline, is regulated by the heating level. The lower the fire, the slower and more evenly the sugar will melt and the lighter our caramel will be. This will not affect the consistency and speed of solidification. Only for color and smell. If you burned sugar and you don't like its smell, then do not waste nuts. Pour out the caramel and start over. There is NOTHING to mask the taste of burnt sugar.
