Looks great Keef! I'm actually curious if there are other things from these times you can share. Like you said, prawn cocktails disappeared or fell out of favour... Anything else from - I assume the 70s - that might be worth sharing? I know steak Diane was popular in the 40s (in America) and also fell out of favour. Maybe have like a nostalgic 70s or 60s themed month? I'm going to have to give this recipe a go though 😁

@@Keefcooks oh! I just meant steak Diane is an example of something nostalgic from the 40s.( Steak and gravy is not exactly a hard recipe). I just meant I'd like to learn more about popular recipes known to you because you lived through it, but unknown to me. For example, I lived through a time when Oreo cookies experimented with neon coloured cream, and kids today will never know what a non peanut allergy world was like. Menacing bikers in leather whimpering away from a small plate of roasted nuts sitting at a bar counter. 🤣

At least the Prawn Cocktail added colour to the Era lol. Looking through some old colour 60s and 70s cook books a relative had from that era and my god aspic was the thing of the day everything was cover in the stuff and all beige looking - then you see the prawn cocktail - bright and vibrant lol

Prawn cocktail! Ohhh I remember how sophisticated and special I felt being allowed to order prawn cocktail off the menu when I was 12 years old! And there’s nothing wrong with it when it has a good mayo like what you made, right there. Last Christmas I had a hankering and made it our entree and it was an absolute smash hit. I think everyone felt a little younger after having it. :)

Great video Keef! I remember this being big in the 70’s and 80’s. I’ve noticed you labeling the sections of some of the videos so it shows on the running timeline. No clue how you do it, but it’s handy for following recipes.

Yeah, that timeline thing is called Chapters and it's pretty neat. If you ever need to do it, all it is is you make a list of timings in the description. As long as you start the list with '00:00', KZitem will pick up on that and apply it to the timeline.

It may be a telling detail that in the US, "Shrimp Cocktail" has not vanished from sight, and is still omnipresent at places ranging from pub-styled restaurants to high-end steakhouses. Here, however, the standard "cocktail sauce" is rarely anything more than ketchup and horseradish, served as a side to "Jumbo Shrimp" in a class with crushed ice, garnished with lemon. I have yet to make immersion-stick mayo, but yours looks wonderful.

Keef, Another absolute winner. I've enjoyed many, many prawn cocktails and really loved your presentation with the lettuce leaves down the side. I guess that means I can eat my prawns off the leaves, rather than the usual mixed spoonful. An interesting variation is the "Bloody Mary" prawn cocktail with Vodka, Worcestershire Sauce, and Black Pepper in the mayonnaise. Now, let's see a few really old dishes, like Tripe or other stuff people have forgotten and won't know how to cook. But, for now it's yummy prawn cocktails with brandy Marie Rose sauce, Rick

Love Prawn Cocktail in our house it's Christmas Day - until we run out of prawns - dinner starter. Always been tradition and no shop bought jar sauce all made from scratch. A good dollop of creamed Horseradish in the sauce base mix mmmmmm adds that bit of tang.

I'm with you, Keef: *I JUST LOVE* Prawn Cocktail, 😋 but I haven't seen it for years, and I really miss it. 😢 That mayonnaise looks fantastic, so now I finally have an excuse to buy a stick blender! 😉 I'm surprised that Mrs Keef didn't seem to like it at all, but I can't understand how *ANYBODY* could possibly dislike a good Prawn Cocktail! 😕

Nice recipe- gonna give it a go, thanks! Question: I often see chefs insist that I need to make a mayonnaise in order to experience the fullness and best flavour of a particular dish, and as you said, especially in a sauce. I tend to enjoy kewpie (a Japanese style Mayo) and find it works well in a lot of recipes and for those that need really plain mayo, I use Helmans- which in the USA, is basically as pure and delicious in a jar you can buy. But these same chefs do insist that it’s okay to use something as processed as that ketchup. Note: I want to make it clear that I am NOT making a hater comment or the like- I am genuinely interested in knowing if there’s a real difference in making my own or using store bought. For me- I completely understand why that ketchup provides flavour with ease that I cannot easily replicate but maybe I’m not understanding more about mayonnaise- maybe it’s texture and mouth feel or something else. Or maybe it’s because jarred Mayo can be anywhere between hideously sour and over-seasoned garbage to meh, so so to decent and it’s easier to tell someone in order to get this recipe consistent, make your own. Just wondering....

I think it might be because the quality of commercial mayonnaise can vary enormously, also if you stick with Hellman's you should be ok. But it's a lot easier to make excellent mayo than it is to make ketchup that tastes like Heinz!

Nice one Keef! I remember my Mum making this in a far more Northern fashion - 50/50 mix of salad cream and tomato ketchup. Your way is much too posh, although probably much nicer to be fair :)

Heinz, or Crosse and Blackwell, salad cream and ketchup was the go in our household. No one ever made home made mayo in the 60s. Surprised you didn't catch the ingredient amounts switcho-swappo at 5:30 Oh, that tie!

Not sure I really want '60;s food. Those old '60's dishes we got in Sydney fill be with reflective dread - Beef Chasseur, Chicken in a Basket, Prawn Cocktail, Oysters Kirkpatrick, Chocolate Mousse and a cheeky bottle of Lambrusco on the table to drown it. And Sweet & Sour pork with fried rice at the Chinese take-away. Then the Italians arrived, some good dishes but most locals preferred Spaghetti Bolognese and Chianti in a raffia wrapped bottle. But the Italians succeded in changing our dining habits. Then Nouvelle Cuisune in Tony's Bon Gout started a movement that led all the way to the modern fusion cooking about 20 years ago - we are still about 15 years ahead of you Poms, but they are trying to catch up! Me? I'll settle for Yamba King Prawns cooked in garlic Spanish style with a bottle of Sardinian Vermentino or a plate of Rock Oysters from Wapengo Lake and a bottle of youthful Hunter Semillon. And tonight we are having a confit duck leg on mushroom Risotto with a good Tasmanian Pinot Noir. Who wants the '60's, but thanks for the history, Keef, and I love the Mayonnaise method.

Well who wants the 60s? Or 70s or 80s? No need to diss it all, there were some great dishes around at the time. But also some horrors too, like chicken inna basket. We have plenty of bad food around now as well - just about everything from fast food takeaways, for example. The trick is to be a bit discerning!

That is a different way of making mayonnaise, from what I've seen. It's usually made with only egg yolk. Interesting. The prawn cocktail looks really good. Cheers, Keef!

@Dan M Sorry sir, I have no idea what you're taking about. I know the audio quality has been up and down over the years, but I've been pretty happy with it for the last year or so. As an old git, my hearing isn't what it was - I can't hear very high or very low frequencies. But none of my regular viewers has mentioned an audio problem in the last few years..

Sorry. I do not go for homemade mayo when I can get mayo from supermarkets. Along with ketchup. Ground black pepper etc. I do then do my mixing.
