Prawn tempura with 2 dips
1/2 kg cleaned medium size prawns ( tail on )
1 cup Maida
1/4 cup corn starch
1/2 tsp to 1 tsp baking powder
Extra Maida for dusting
2 eggs
1/4 cup Cold water ( or more until u get semi thick consistency)
1/4 tsp salt( needed )
Celery leaves
11/2 tsp lime juice
1/2 tsp pepper
Method
Make small slit on top and bottom part of the prawns ( this prevents prawns from curling)
And then gently press down as seen in the video
Pat dry prawns
Dust prawns with Maida , remove excess flour , keep this aside ( do not skip this step )
For batter
In a bowl add Maida , cornflour, baking powder and celery leaves
Beat eggs until fluffy , then add cold water , again beat and add this to the Maida mixture, then add salt , lime juice , and pepper again mix , add more cold water if needed .Batter should be semi thick consistency.
Things to note while frying
Oil should be really hot
Fry prawns in small batches
Recommended frying prawns just before serve
Fry prawns until golden brown
3 type dips
Mix mayo , finely chopped spring onion and pepper
For second dip
2 tsp grated ginger
2 tsp brown sugar ( u can add more for sweetness)
4 tbs soya sauce
1 tbs vinegar
