韭菜豬紅
材料:
豬紅12兩(約20粒)
韭菜2兩
蒜頭3粒
薑1小舊
辣椒仔1隻
處理:
1. 豬紅,清水沖洗乾淨。
2. 在鑊內加入清水1升,放豬紅落鑊,加入紹興酒1湯匙及鹽半湯匙,大火煮滾。
3. 預備一碗冰水。
4. 豬紅已滾起,撈起,放入冰水內。
5. 韭菜,清水浸。
6. 薑,去皮,清水洗乾淨,切絲。
辣椒仔,清水洗乾淨,去籽,切粒
蒜頭,去皮,切成蓉。
7. 韭菜,清水洗乾淨,切3吋一段。
烹調:
1. 大火在鑊內燒熱油1茶匙。
2. 加入韭菜,炒香,放碟上。
3. 豬紅,擎乾水。
4. 大火在鑊內燒熱油1茶匙。
5. 加入蒜蓉及薑絲爆香。
6. 放豬紅落鑊。
7. 加入調味料:
a. 蠔油1湯匙
b. 胡椒粉適量
加入清水100毫升,大火煮滾。
8. 試一試味,可以酌量加入生抽及糖各半茶匙。
9. 加入韭菜及辣椒粒落鑊。
10. 加入少許生粉芡收汁。
11. 完成,放碗內,可享用。
Pigs' blood with leeks
Ingredients:
Pigs' blood 12 taels (about 20 cubes)
Leeks 2 taels
Garlics 3 Nos.
Ginger (small) 1 No.
Chili 1 No.
Preparation:
1. Pigs' blood, rinse with tap water.
2. Add in 1L of water in wok. Put pigs' blood in it. Add in 1 tbsp of Shaoxing wine and 0.5 tbsp of salt. Heat up at high flame.
3. Get ready for a bowl of iced water.
4. Pigs' blood has been boiled up, pick it up and put into iced water.
5. Leeks, soak in tap water.
6. Ginger, get it peeled. Rinse with tap water. Get it shredded.
Chili, rinse with tap water. Remove seeds. Dice in cubes.
Garlics, get them peeled and mashed.
7. Leeks, rinse with tap water. Cut in 3" in lengths.
Steps:
1. Heat up 1 tsp of oil at high flame in wok.
2. Add in leeks in wok. Fry well. Put on plate.
3. Pigs' blood, get it drained.
4. Heat up 1 tsp of oil at high flame in wok.
5. Add in garlics and ginger in wok. Fry well.
6. Put pigs' blood in wok.
7. Add seasoning:
a. Oyster sauce 1 tbsp
b. Pepper appropriate amount
Add in 100ml of water. Heat up at high flame.
8. Check the taste. Add in 0.5 tsp of light soya sauce and sugar per each if necessary.
9. Add in leeks and chili in wok.
10. Add in little tapioca sauce to make the sauce thick.
11. Complete. Put in a bowl. Serve.
Prepare it at home, just 3 minutes. It's easy, no special skills needed. You can make it too.💪💪
