This week I started decorating and preparing our home for Christmas, adding simple touches of Christmas throughout our home.

* Apple Crumble Cheesecake *
- Biscoff Crust
- 350g Lotus biscoff cookies
- 150g unsalted melted butter
- Crumble Topping
- 40g unsalted melted butter
- 40g all purpose flour
- 40g brown sugar
- 30g rolled oats
- Apple Topping
- 2 apples
- 40g brown sugar
-1 tsp cinnamon
- 2 tsp cornstarch
- Cheesecake
- 700g cream cheese , softened , room temperature
- 75g sugar
- 100g greek yogurt
- half tsp cinnamon
- 2 large eggs, room temperature
Instructions:
Biscoff crust
- crush cookie in a food processor or put the cookie in a ziplock bag and using a rolling pin crush the cookies thoroughly .
- add melted butter to the crumbs and stir together
- Put the crumb mixture to the pan ( 9" springform pan )and spread it around the bottom and up the sides of the pan
- Let the pan chill in the fridge while you prepare the rest of the filling
Crumble topping
- Stir together in a medium bowl the ,melted butter, flour, brown sugar and rolled oats until it forms a thick crumbly paste
- set aside
Apple topping
- In a small pot, stir together sliced apples, brown sugar, cinnamon and cornstarch
- Cook until fork tender and thickened into a jammy consistency.
Cheescake
- Preheat oven 325°F
- In a large mixing bowls add softened cream cheese, sugar, greek yogurt, vanilla extract and cinnamon.
-Mix until smooth and creamy
- Add in the eggs one at a time, until completely combine
- Pour the cheesecake batter into your pan on top of the chilled crust
- add the cooked apple slices , gently laying them down so they don't sink
- Crumble up the crumble topping and sprinkle it on top of the apples
- Bake fro 65-70 minutes or until the cheesecake is still slightly jiggly
-Let the cheesecake cool completely at room temperature before chilling it int eh fridge too et at leats 6 hours or overnight.
