Thanks Mr Jackson ✊🏾 @newmack We used to boil the jars in bigger pots over the fire and that took 4+ hours to complete, the pressure cooker takes about 2/3’s of the time off, it’s the seal on the bottom part of the lid that makes it vacuumed to the glass part of the jars, the heat also does the work of taking the pressure out of the jars, you boil the lids to activate the seal and also helps with sterilization of the lid, hopefully I have explained it enough to understand,if not my apologies. Tyson, I remember very well how to use the boiler method. We also used an open fire back in the day but instead of jars, we used cans... it was quite a process. Back then, we didn't know a pressure cooker was available to the average consumer and if my parents were aware of that, it would have been out of the price range they'd be willing to pay.

@@epicallyindian9712 thanks for commenting back Mr, I remember you from when I was a kid and I believe you worked for the old GWA? Or conservation? I’m unsure which it was. I was actually raised my my la late uncle/father Art Loring, you may remember me but it’s definitely been a long time, I’m from kitwanga but have been in Kispiox for 12 years now and continuing my teachings and knowledge of our culture, actually just finished a 3 day cultural camp with the school. I remember my grandmother trying cans one year and she didn’t like them and gave them away, but yes absolutely won’t forget those days. Thanks again Mr for sharing your experience and knowledge.

The Kitwanga Danials came to mind when I read your handle. I remember Art well and I'm very sorry he isn't physically with us but I am certain he walks with our ancestors. I did work for the GWWA as a Ranger a very long time ago... I always enjoyed my visits with Art along the riverbank and on occasion hunting our Lax Yip. @newmack5621 The pressure cooker speeds the cooking time. When the jars start to cool, you will hear the lids flex inward toward the contents of the jar. This creates a vacuum seal and eliminates oxygen from the inside of the jar and, in turn, this prolongs the shelf life significantly.

Can you stack the Jars to fill the pressure cooker? Never used a pressure cooker before.
