In Syria they have stuffed small eggplants. They have a pepper, garlic walnut stuffing. They are in a jar with olive oil. I love them on rice.

I grew the same eggplant a few years ago and had to much to eat at once so I decided to make my own tomato sauce and froze the sauce then vacuum sealed it and put it in the freezer. I used eggplant instead of meat and the sauce tasted great over pasta and kept all winter.

We have far too many appliances on our kitchen surface, so a freeze dryer will just add to the load, so I’ll probably just freeze in bags. Thanks for the great recipe.

@squange20 The only issue with freezing everything is when power goes out. So I freeze some and dehydrate some. Just in case. I am trying to get away from depending on freezer so much. Hope this gives you ideas

Let’s not forget the basic process of dehydrating the eggplant!!! It is the most simple and effective for long term preservation! Just blanch first then dehydrate and use as you need!

There are many Indian recipes that use eggplant, ie brinjal, and they are tasty. I use Italian or Indian recipes for eggplant. I know some call for many ingredients, but you can use a little or more. I don’t like too many chillies and whole spices like cloves and cinnamon, so tone it down a lot. Still nice though.

One of my faves is to slice it and set it in a skillet with a smidge of oil. Cookk one side till golden brown and flip it. Add your fave shredded cheese and some salt pepper and garlic (or your fave seasonings, my in laws like Italian seasoning) and cook again until bottom is golden brown and cheese is melty.

I'm seeing other recipes for baba ganoush call for tahini. Is there a reason you do not include it, or is it just a taste preference?

Actually, you can use the chunks for eggplant Parmesan by smashing them similar to potatoes and then adding fine bread crumbs as a binder with an egg. then make patties!
