Roasted Pumpkin Seeds:
1. Scrape seeds from pumpkin with a spoon or cookie scoop.
2. Add the pulp and seeds to a bowl with water and let them soak for 15-20 minutes.
3. Use your hands or a slotted spoon to transfer the seeds to another bowl.
4. Once you’ve separated the pulp from the seeds, soak the seeds again for 30 minutes to an hour to remove any remaining pulp.
5. Lay the seeds on a towel to dry for a few hours or overnight.
6. Coat the dry seeds in olive oil and salt.
7. Bake at 300 for 35-40 minutes.
