My daughter bought me a Field 12 inch skillet for Christmas last year and I absolutely love it. The field folks are recommending grape seed oil nowadays-2019-but I’m sure about anything works. Deep frying stuff is my favorite way to build that seasoning! Great video! Best wishes! Semper Fi

I love the Field skillet. I have a smaller Griswold cast iron skillet and always wanted a larger one whenever I wanted to cook for more than just myself. Buying a used, larger Griswold skillet online tends to be expensive and the shipping fee are insane. After doing some research, I found the Field skillets and fell in love. Right after Thanksgiving, the Field website was running a 15% off promotion and I purchased the #12 or 13 3/8" skillet. It's been almost a year and I absolutely love it. The Field skillet feels like a modern interpretation of my old Griswold without the spouts. Yes the Field cast iron skillet is expensive, but if you're going to cook with it often, the lighter weight (love the thinner walls), ability to heat up faster than something like a Lodge, longer handle, and smooth surface makes it worth the price for me. The Field cast iron skillet is still cheaper than other premium brands out there and in my opinion it's just as great if not better than those if you don't care about a spout.

Dec 2021 update: The field #8 is now running $145 everywhere. I just bought the Stargazer #8 on a Black Friday sale for $100. An interesting newcomer to the cast iron field is Lancaster, their #8 runs $175 but is supposed to be slightly lighter than the Fields, still has pour spouts but no helper handle, and allegedly is highly finished. I have seen several reviews that suggest it comes very close to a vintage Griswold. I'm doing a comparison as one of my friend makes amazing cornbread in her grandmother's vintage cast iron skillet. I don't remember the brand, but she states that the difference in the way it cooks is due to the cast iron being thinner (I remember it also appears quite smooth). Anyways, happy hunting, there are even more new companies producing higher quality skillets that compare favorably to the vintage skillets.

Thanks for the update. I agree about the cornbread. I have an old square Lodge I use for cornbread and biscuits and a 10 inch Wagner when I want a bigger amount. They give me a perfect finish for cornbread and make a nice crunchy bottom for my biscuits. I would love a Stargazer, but alas, I no longer have the disposable income -- plus I don't have an empty hook for an additional skillet!!

Well, I did all the steps that you suggested, and after a time consuming and energy draining couple of hours, I am happy to report... It worked! It was quite a struggle, but it isn't tacky anymore! I was actually thinking it might be some manufacturer pre seasoning that did it, anyhow we are back to normal and I will be seasoning with your steps from now on! I would bake you a cake if you were here! Thank you for saving my cast iron!

ok, Debbie, this is a little off topic, but here goes--I mentioned before how I messed up on my new skillet(it got sticky)when I seasoned for the first time, remember? Then you gave me step by step how to correct this, and it did! So, I love the pan and watched this episode and decided to be brave and invest in another(12 in) getting used to it, and doing the steps, and now I bought a new Lodge! 101/4! You have given me my cast iron confidence back! My grandmother would be so proud of me, I only wish that I knew then what I learned from you now, so I would have kept her heirlooms!! Kicking myself!! 😠

I am so glad. Using cast iron adds an extra dimension to our cooking, IMHO, and they are the last cookware you will ever have to buy. Check out some flea markets. Now that you know how to clean and restore, you are likely to find some treasures hiding under the rust and dirt that would make your grandmother proud. Good luck

It's so cool to see more people who understand that its a myth that you can't use soap on seasoned cast iron. Scrubbing too hard will do more harm to your seasoning than gently wiping with a mild dish soap.

Oh, yes. I think the fear of soap comes from a time when folks used homemade lye soap, I always wonder why folks don't connect the build up of old crud on an old skillet to the practice of not using soap.

A Lodge is a little different than a Field Skillet. You want to follow the directions that came with your Lodge. You are going to love cast iron cooking.

The pan seems to be seasoned already. I have used it several times now and it has stayed perfect. I just wash, dry on the stove, small amount of fat, heat to smoke point and wipe clean.

I think it might be cheaper when it hits the stores, but maybe not. Finex is much more expensive and not nearly as good, imho.

Oh, I don't know about that. Finex is heavy, but that's part of the design for better heat retention. My Finex will cook a cheese omelet like you made in this video, only there would be no browning and the omelet will FLOAT across the pan. Melted cheddar or not. I've had eggs stick to my spatula because my Finex skillet is so slippery!

The Finex costs twice as much. I looked at Finex, but I particularly wanted American made and I wanted it smooth. After a couple of weeks nothing sticks to this skillet. No slam on the Finex, of course, but some of us use American made when possible.

All Finex pans and cookware are hand-crafted in a small shop in Portland, Oregon. All raw materials are locally sourced. The brass and spring parts of the handles are also made in-house. The work is done by 12 highly experienced artisans. So of course, the labor costs will add considerably to the price. I have never seen anything like a Finex skillet. One the Field Skillet: It is fabulous to see an American-made cast-iron skillet made like the vintage Griswold and Wagner cookware. And from the video, it produces excellent results. Another new brand is Stargazer. I am hoping that the two companies can eventually produce a whole line of cookware that can be highly competitive with Lodge. I do plan on purchasing a Stargazer and a Field skillet some time in the not too distant future. I am grateful to see that fine cast-iron cookware is being made in the United States. I agree that with Finex, Stargazer, Field, and Lodge offerings being made available in nearly all price ranges, there is absolutely NO reason to buy a pan that was made in China, or any other foreign country.

Well, glad you like your Finex. As I said, the price difference prevented me buying it. Plus, all the springs and wood are just unnecessary, imho. Not dissing your choice, but the Field is as close as I could find to my favorite Griswald.and $100 is a lot of money for me. I just don't care for that rough finish. If I did, I could buy a Lodge for $30. it is all personal preference.

I've seen videos of people sanding the texture off some cast iron pans. But if you can buy it already smooth, that is easier than sanding a rough one.

i recently bought a BBQ Toro plancha with a reeeeeally rough surface. I risked it and made a pizza with it - it turned out perfect and the pizza totally did not stick. that was the moment when i fell in lurve with cast iron 🥰

Great video, I just bought a lodge, and the first thing I did was strip down the preseason with a stripping tool, then sanded it with 180 grit sand paper, washed out with hot water ,put in oven 200 degrees for 25min ,NEVER USED SOAP, THEN SEASONING, I’m on my 12th seasoning, at 500 degrees oven for one hour then let it sit in oven until oven is cold,now I have a smooth glass finish and my eggs slide around the pan, lot of work But worth it in the long run.

That Benjamin Medford is likely Chinese made. I have a number 10 BM. The seasoning has taken well to mine and it is about 30 years old. The quality is obviously variable.

My son bought this skillet and it's exceptional but spendy. Several others are out and one that is less is the stargazer. It is $80 bare I got one for $68 with a 15% off they offer Veterans and Military. Can't wait to get it the finish in videos appears very smooth also.

The Stargazer looks good. I have heard they are great, too. By the way, my family had a Dodge Polara. 1964 I think. The gears were push buttons if I remember correctly.

you can sand the lodge if the field is too expensive. I think now they go around 120-150. If you can inspect the cast quality. Like you see in this video wagner and griswold are both smooth but griswold have better casting (less pits and voids). I buy my for under 30 sand it and the surface look just like griswold just some small pits but the main surface is good. Best part is it main products are outdoor fire pits and cooking over fire. Their castings are rough but better pore then loge.

Somebody tossed a Griswold #704 small block in my backyard. Took me 4 days to clean it up but it is non stick now with some pitting but it cooks fine!

Beautiful pan. I have the first one you showed. The grizwal. It looks just like yours. My mom gave it to me. It has that beautiful slick surface. I have another one from my grandmother it doesn’t have a name on the bottom but it doesn’t say made in the USA either. It’s a chicken fryer. I wish that my grandmother could see that skillet now. It was caked with old oils on the outside and I put it in the oven on oven clean setting and everything came off. She used it everyday before she passed away. I wish that I knew what kind it is.

There are lots of old, unnamed skillets out there. Show me a photo of the bottom and the handle and I might be able to determine who made it, but not all these mysteries can be solved. I am sure it has cooked lots of delicious chicken.

I ordered my Stargazer after the KS and took 10mo. to get here (they got their stuff together so I think lead time is much better now) and loving it. My other CI's are Lodges so the Stargazer is my 'smooth' pan. The 2nd thing I cooked in it was OM eggs(over medium). Right off the bat, after the whites set, the eggs were sliding all over the place. One of the keys to this, as Debbie says, is to cook the eggs at a lower temp.

Debbie have you some more information about using lard and butter instead of oil. I stop using oil because sometime i dont use it for 3 or more weeks it stink from rancid oil. After switching to animal fat, no stink ,pan is not sticky to the touch. Seasoning builds up and heal fast. Is smooth ,easier to clean and can handle stainless scrub pad.

I sometimes use oil for cooking -- grapeseed oil or sunflower oil. I never use corn oil, canola or "vegetable" oil I don't use olive oil for frying, although I sometimes use it for low heat cooking. The Field company says a saturated fat is better for seasoning and my preference is lard -- not butter. I haven't experienced the rancidity you described, but that is probably because I use hot water and soap and I wash my pans thoroughly every time I use them, or maybe it is the type of oil you are using.

All you have to get you a lodge skillet then get you a palm sander use 60 grit sand paper to sand the inside button for about 10 minutes. Then use a 120 grit for about 5 minutes. Now it is time to season it! Boom you will have a non stick cast iron for life.

That Griswold is a late era post 1960 model. The dead giveaway is the “Made in USA” marking. In 1960, FTC regulations changed requiring country of origin markings, so that’s an easy way to tell how old your pans might be. I have my grandmother’s Wagner that I thought was much older, but nope-it’s a 1960s model with a “made in USA” mark. Not too worried, though-it still works very well, and it’s still Grandma’s.

powerdog242 that griswold skillet is from the 20's or 30's. It says Erie Pa. USA also known as Griswold EPU. They didn't say MADE IN USA until after 60. Where as Wagner says Sidney O. For Sidney Ohio. MADE IN USA was after 60

Nice job Miss. Debbie. Like you ,I am old-school but willing to try new Concepts too. In my case, slight Browning of the egg mix in the skillet cooking method shown is totally fine with me and tastes just great. Have you ever tried the slide and fold method? That's where you slide the whole egg omelet out halfway in the pan and then flip it over onto the plate so that you got two matching halves without tear outs hopefully. It works, once we practice for a while. Best regards.

I love my cast iron. I cook almost exclusively in cast iron, I also have my first (and only) stainless steel set that I use when I'm cooking something that I don't want to use cast iron for but I go for the cast iron first. I have both old and new cast iron (Lodge) and I love them both. I really have no problem with the new cast iron, the texture has never been an issue luckily for me. I would however like to try a new pan like the one you just showed, but I'm not sure I have room for a new pan😳, my collection is crazy but I do use my pans! Thanks for the video! I enjoy watching cast iron cooking!

I love it. It takes a while for it to get black all over. It sort of fills in a little with each use, so for a while it looks a little splotchy, but the more you use it the more uniform the color gets. It had been so long since I had actually used a brand new skillet, I forgot that part, so I was a little worried at first, but now it is beautiful. The more I use it the more I like it.

Old cast Iron has no modern equal. I have a full set of Wagner s except my dutch oven that is unmarked. I use them every day and use flax seed oil since real lard is hard to find at a super market. We rendered our own on the farm back in the 50,s and 60.s.

@@rainstormr7650 I noticed you posted replies on lots of comments asking about old pans and smooth surfaces. It is simply a personal preference. Folks don't have to show the science to justify what they like. They just like the old, smooth pans. If you prefer the pebbly ones, that is fine, too. Nobody has to anything to prove. Use what you like. It is a totally subjective choice.

Debbie's Back Porch ; yes i did...because overall & in many places & vids its either mentioned like there is some logic/science to it , like there is something more than just a preference to it, OR it comes accross in that way...- personally i kinda like the idea of the pan having a bit of a rough surface...but either way, i was looking to delve a bit deeper & figure something more & if there was some kinda logic behind it maybe - someone might have some thinking about it that might make sense....i wouldn't mind buying a smooyh pan & also most of the teflon pans are smooth just the other day i found out that some ironware was traditionally made quite rough (& still is)...to be smoothed out by constant usage & seasoning - lodge says something on the same lines about their 'now' roughly finished cookware. on the other hand , i came accross someone saying that there isn't enough of the fine sand left (which is used in the casting)...not sure how much truth there is to that one. bye for now, & have a great day

i have a question on cleaning a pan after making sausage gravy ( a once or twice a month treat)....should i clean my skillet asap after pouring out gravy, or wait til later to clean.....i have been washing right away, but seems that is taking part of the seasoning off...as it will almost boil, since the pan is so hot...any tips would be great appreciated!

I let mine cool first. The shock of water on a hot pan can cause it to warp.

Everyone is an expert on cast iron, hahaha. On the question of warping, It is caused by uneven cooling at a rapid rate. A skillet is not likely to warp from heating up, because even at a high heat, cast iron heats relatively slowly even on high heat. Your home stove is not likely to ever heat a pan too quickly. Cooling down is different. If you plunge a hot pan into a basin of water, even at your highest tap temperature, you are cooling unevenly and at a rapid rate. Different parts of the pan will cool at a different rate and the conditions for potential warping exist. So it is one thing to speculate whether or not it might damage your skillet, but why would you take a chance just to see if you are right? Even if you don't warp the pan, you are stressing the polymerized coating you have worked so hard to create. If you make gravy in the pan, just let it sit until after you eat, make some nice hot soapy water and scrub it out. I keep a little razor scraper to run lightly over anything that is stuck. No, soap and scrubbing don't hurt the finish, but thermal shock can.

Finex is the best but I cant afford it. The feild skillet is awesome and affordable and will last a life time if taken care of properly. I just wish the feild pan came with some lids. A feild pan will not make it to stores . Feild is a private company.

Thanks Debbie. The only thing I don't like about Fields is the pan edges don't have a slant to them, or pour spout. I think your omelette might have been perfect if you could have worked it from a a bit more of an angle. If Field makes one with slant and pour spout, I'll buy. Until then, I'm a Griswold Girl, with heat ring.

I have a Favorite Piqua that has nice high sides on a slant. I use it for cobbler or braises.

Just started getting into cast iron. Tried to go antique but they are upwards of $100-$250. I honestly don’t have the time or patience to go antique shopping. Plus I don’t want to mess with restoring it. Maybe I am better off getting this field or a butter pat. Torn between and not sure what to do. I would get both but they are pricey. Plus not sure how many cast iron is too many. Any suggestions.

I figure I have too many when I run out of storage room. Many of mine were bought at thrift stores and flea markets, but if you don't have time for that, The Field Skillet is a great skillet. I truly love mine. It reminds me of my Griswold.

Me, too. I just cannot justify buying one, though. I have trouble keeping the ones I have in use. I gave two away last month to a family member who will use them.

@@DebbiesBackPorch yeah i got some new lodges and a China one but really want to get me the smaller Smithey. $100 but just have it to give my 12 year old daughter to have forever. She enjoys her new lodge cast iron. She enjoys getting out my orbital sander and smoothing out a new bumpy lodge and seasoning the shit out of it and it coming out like glass. My process of seasoning is a mixture of alot of deffirent ways of doing it. I do like 10 oven seasonings with veggy oil, then do 5 stove top seasonings. Then I do a stove top seasoning with lard then stove top use seasoning deep frying something in it then pouring out lard and wipe it off and heat it back up and let it cool back down but as it's cooling keep wiping the cooking surface off. Probably over kill but works and I think it helps simulate real life usage.

I’ll stick with my $40 13 1/2 inch Lodge. For $100 I can get 3 different size Lodge skillets. The 3rd day I had it I cooked over easy eggs with no problem.

It is certainly a matter of personal choice. I have an old Lodge made in the 30's. My neighbor found it in an abandoned house. I cleaned it up and love it. Smooth as glass. After using that, Wagner and Griswold, the pebbly finish of the new Lodge's is just something I don't like, but many folks do like it just fine. Your kitchen, your choice.

Thank you for great videos. I have never use iron skillet, but always curious about it. I do make homemade biscuits, fried chickens ....so forth, but never in iron skillet. I just wonder, would it make any different? Thanks......

Price wise you could start with a preseasoned Lodge skillet and see if cast iron is for you. Just be a little heavy on the fat/oil the first couple of times you use it to 'break it in'.

I don't know this first hand but I have read in several places that a heat ring on a cast iron skillet CAN cause a problem on a glass top stove.

I have a glasstop and my Field hasn't had an issue. Used it for a year so far. I know its been awhile since you asked, but hope that helps! Field is a great purchase.

I use either home made leaf lard, or packaged lard from the grocery store. You can generally find t on the shelf in most stores. Of course, I prefer the home made lard, but I don't always have it.

best non stick is 100% ceramic but its expensive. ill stick with my well seasoned cast iron

I have had ceramic. It is pretty fragile and starts looking bad quickly. I don't want to be that careful. Cast iron is not 100 per cent non-stick, but it is close and it lasts forever.

Thanks for this video. I'm new to cast iron. You mention using Dawn to wash. Do you only use soap when you first get the pan or do you use it pretty regularly to clean..? I worry about not washing with soap..won't it take on the food flavors?

I wash my cast iron every time I use it I have another video, Common Sense Care of Cast Iron. The advice not to wash comes from old times when folks used lye soap. A little soap won't hurt your cast iron if it has been seasoned properly.

Hi Debbie,,(again), why is my new pan tacky? I seasoned it, but it 's tacky.. What did I do wrong, and how can I fix it?

Well, I don't know. If it is tacky, scrub it well, dry it with a soft cloth, put it on the burner, let it get hot and dry. Turn it off. Rub it in lard (or a high smoke point oil like coconut oil), wipe it as clean as you can, then heat it up again. When it starts to smoke, turn it off and wipe it again (be careful, don't burn yourself. When it is cool, see if it is still tacky. You might have used the wrong oil. It won't hurt to do that a couple times. If it doesn't work, Let me know. We can talk some more.

The Wagner is older than griswold how do I know the USA is on the back so it is 1962 at the oldest

Not sure that is correct with Griswold. USA appears on some of their very old logos. My understanding is that Griswold pans made after 1957 (when the Griswold manufacturing facility closed) did not contain the "Erie PA" on them. I think mine must have been manufactured before 1957, but it is not important to me. It is possibly younger than I am, but it cooks perfectly. I have a Krone Kraft that can be no younger than 118 years old, since the plant closed in Denmark in 1901. The age is not really important to how it cooks, but it is interesting to know.

BTW, the logo on my Griswold, including "Erie PA USA" was used between 1924 and 1940. Once I started looking I couldn't stop until I found it.

Not sure what you are asking. It has a logo and a sort of very shallow heat ring around the edge. Just a little. Was the pan smooth and straight? Yes. thought I showed the bottom.

Have you taken a straight edge, such as the edge of a credit card, and placed it across the center of the pan. If so, I am wondering if you have noticed any space between the straightedge and the pan. This test is frequently used by collectors of vintage cast iron skillets such as Griswold, Erie, Wagner, and etc.

Yes. It is perfectly flat. It would never have occurred to me to check that on a brand new pan, but I did and it is.

Dish detergent just doesn't hurt your cast iron. Salt does more damage. You will notice that I followed the manufacturer's directions.

When cast iron is NEW or freshly out of the oven for restoration is the only time the cast should see soap. Use hot water to loosen any bits and scrape with a piece of plastic designed for that. Then rinse with water, dry with a lint free towel, not a paper towel and put on heat to thoroughly dry... add oil to reseason and wipe excess.. LONG TIME RULES!! Peace, Happy Holidays!~ EDIT... Salt is only meant to remove heavy rust residues due to lack of proper care.

Randall, you should do it the way you like. There is a lot that has been learned since old times. When my grandmother washed her cast iron, her choices were plain water or lye soap. Nobody uses lye soap anymore. When you find old skillets with half an inch of build up caked on it, it is likely because it hasn't been properly washed in decades. Today's dish soap will not hurt properly seasoned cast iron, but you should do what works for you. I promise not to come to YOUR kitchen and criticize.

I was not meaning to criticize as much as to be more of a purist for cast iron care... if someone has 1/2" of gunk on their cookware, would you feast from it? Sounds a bit of a jerk statement, but not intended that way. If you would research more, you'd see that not many that truly use cast , use soap on it. there is no reason. the seasoning gets thicker and harder with 'due care'.. again, not being a jerk. Instructional videos should be there for the common person that has no idea of what to do. That would be the same, to me, as saying it is OK to water bath green beans. My mom did, but modern science proves that the green beans need to be pressure canned. I hope you can see the analogy. Of note.. per your own words, your grandmother used EITHER plain water OR lye soap.. and then you said 'no one uses lye soap anymore'. Guess that water is all that remains! ??

No. Water bathing green beans is unsafe and proven so. You are right however, that we have learned a lot and the fact that today's soap does not hurt cast iron is something we have learned. I generally don't argue on my channel, but let me clarify this for you. You believe that soap shouldn't be used on cast iron. There are plenty of folks who use cast iron and have studied the science of seasoning who understand that if soap is hurting your cast iron, it has not been seasoned properly. If you have seasoned it to the point that the oil has properly polymerized, then today's soap won't hurt it. Neither will tomatoes or other acid foods. I have cast iron manufactured in the 19th century and it shines like a new penny after many, many washings. Again, you should do what you are comfortable with, but please don't expend any more energy trying to convince me that your way is the only right way. I have been using cast iron for a lot of years, washing it with soap, using metal utensils and enjoying it a lot. Definitely pricey. It is a great skillet, but not everyone is willing to pay that much. I keep hoping they will go down in price, but not so far. I got mine for $100 because I pledged to the Kickstarter campaign before they were even on the market.
