Good to know that it has to go back in the fridge before cooking it, I wouldn't have known that. Thanks for the history, I was laughing when you said you gave up on trying to figure out the difference between provolone and provoleta. That's how I felt when I was researching something on pasta recently. Cheese is probably my favorite food so my mouth is watering right now. I do intermittent fasting, so I don't get to eat for 5 more hours so probably shouldn't have watched this now! Great job as usual, Parnell!

Been to Argentina many times and nobody in the US makes the real thing, even the famous argentine restaurants in Miami give you a bowl of goo, nothing like you get in Recoleta

Thank you! An Argentine chef Santiago Giorgini says that leaving the cheese--unwrapped--preferably in the fridge is key, so yes, doing so ensure that the flour sticks and the cheese holds its shape. Get ready for more Argentine recipes!

Hi, Chris! Thanks for the kind words. Glad this video was helpful. You are right: most Argentine people do not like spicy things. However, oregano and crushed red pepper go very well with provolone, I think. If you Google "provoleta con aji molido" (provoleta with crushed red pepper), you will see that there are a few people who do it. It's really good! Let me know if you give it a try👍😉🧀🇦🇷🇺🇾

Haha, awesome! I know it is better to make it on a grill, but I saw Locos Por El Asado do a pan-fried version, so I thought it would be OK, haha. I think that the sprinkling of crushed red pepper and oregano is what makes it delicious. 😉

Thank you! Provoleta is definitely delicious, especially with the oregano and crushed red pepper. Grilled buttered bread would work, but if Argentines eat it with bread, it's usually just a thick white bread--I think a buttered bread would be a bit too oily, but anything with a fried cheese appetizer is good!👌

No, I am not. I studied abroad there, and I know a lot of people from Argentina. Even here in Chicago, I always find them--even walking around downtown Chicago! For some reason, the universe wants me to know them, haha--and now I have a ton of Argentine recipes like Provoleta!

Thanks you for the encouragement! Subs are slow but steady--it's a marathon, not a sprint. I'm glad you like the history. Argentine food isn't well known, so I wanted to add some history and culture as well. Once I go back to Southern food, I will be discussing history on those videos as well. Yes! If you have a grill, then you can cook it right on the bars instead of in a pan. What really makes it is the sprinkling of oregano and red pepper flakes. My friend from Argentina visited me and tried my Provoleta, and he said it was good!👌👍🇦🇷

Hmm, I was doubtful at first but that looks amazing! I would say perhaps a splash of truffle oil and some fresh oregano to get fancy if I could offer a humble addition...

In Argentina I've also heard of a bit of fresh tomato added while it's still cooking, as well as some sort of red-wine based vinaigrette--there are a lot of ways to add to this fried cheese appetizer, but most Argentines stick with the traditional spices, haha👌😉

Lol, or you could do a play on caprese in the spirit of the italian style I was thinking with the truffle and oregano. Think of a BLT made with a friend green tomato, now reimagine a caprese with this... Just thinking aloud.

Thank you! Provoleta is delicious, but not low-calories, unfortunately. I would start with a low fat cheese (or cheese substitute), but then add the oregano and crushed red pepper to give it the Argentine flavor.

You should! Provoleta is amazingly delicious! If I am not mistaken, I used a mild Provolone in this video...but now that I think about it, I actually prefer the taste of a sharp Provolone. The recipe is the same either way. Let me know if you make it--you won't regret it!👍
