Ptichye Moloko Cake
For a ring with a diameter of 20 cm.
Sponge cake:
- 3 egg yolks
- 75 g of flour
- 0.5 teaspoons baking powder

- sugar = weight of proteins *2 (if 250 g of protein, then 500 g of sugar
BEFORE YOU TAKE THE RIGHT AMOUNT OF SUGAR, WEIGH THE PROTEINS FIRST!)
- 1/3 teaspoon of lemon juice
GLAZE:
- 200 g. dark chocolate ( I have Sicao 54% cocoa)
- 70 g. cream 33% fat content
DECORATION:
- 20 g of dark chocolate
- 2-3 tablespoons cream 33% fat content
