This is a curry recipe prepared with pumpkin and coconut milk and can be served with rice, roti.
Ingredients:
Oil 2 Tablespoons
Mustard seeds 1/2 Teaspoons
Garlic(finely chopped) 1/2 Teaspoons
Curry leaves 1 Springs
Onion(finely chopped) 1 Numbers
Salt 0 To
Green chillies 2 Numbers
Turmeric powder 1/4 Teaspoons
Red chilly powder 1/2 Teaspoons
Curry powder 1/2 Teaspoons
Pumpkin(pieces) 1 Cup
Coconut milk 1 Cup
coriander leaves(chopped) 1/2 Teaspoons
Directions:
1. Heat oil in a pan and add mustard seeds, garlic, curry leaves and saute it.
2. Add onion, little salt, green chillies, turmeric powder, red chilly powder, curry powder, pumpkin and saute it.
3. Add little water, coconut milk and mix nicely and cover it with lid and cook for 4 mins.
4. Check for seasoning and add coriander leaves.
5. Now pumpkin and coconut milk curry is ready to serve with coconut rice or roti.
