Cut large pumpkin skin pieces into smaller ones, about 1-2 inches long and wide. Put into a large bowl and toss with olive oil, salt, nutmeg, and cinnamon. You can use other seasonings here too, like ginger, allspice, pumpkin spice, pepper, cajun seasoning, chili powder, etc.

Place into the air fryer basket. Set to 375 degrees Fahrenheit (196C) for 8 minutes. Toss halfway through. While you can air fry the pumpkin in a single layer, it's not necessary. Just make sure to toss thoroughly. If you have a large air fryer or an oven-style air fryer and prefer to cook the chips in a single layer, that's fine too! But with a small basket, this may take a while.

Curried pumpkin soup. Yummy. 1tsp turmeric. 1tsp coriander. 1tsp garam masala. 1 onion. 2 garlic cloves crushed. 1tsp ginger. Roast pumpkin then blend all ingredients together. If too thick add veg stock to thin in blender. Yummy. Season to taste.

Pumpkin, butternut squash, aubergine and courgettes, are, without a shadow of doubt (in my mind), the world's most tasteless veg. Compare those to leeks, parsnips, onions, pan-fried turnip and celery...PACKED full of flavour. That said, this soup looked bloody fine! 😋

Looks good to me Keith. Yes it needs to be a bit thinner and smoother. If you don't want to use the mushrooms and cheese, a dollop of sour cream and chopped chives instead. You've got to have crusty bread with pumpkin soup. Pumpkin soup is very popular in Australia, homemade or bought in a can. Baked pumpkin is a staple for the sunday roast for us Aussie's 🇭🇲 Thanks Chef Keith 👍🤤😀

I'll be batch cooking some pumpkin soup soon, I love it. That way of roasting is so much easier than cutting it up, which I normally do, so I will definitely be doing it this way. It looks lovely.

I put a touch of curry powder in mine, it’s delicious, also a stick blender means you can blend it in the pan, less washing up 🙂

That ham stock sounds like the main source of flavour, im not convinced a veg stock or even chicken would be as tasty. That sounds quite nice in fact with a ham stock.

Good attempt should have seasoned it and grated some of the parmasan cheese in it because it is a bit salty but good effort 👌
