I used round zucchini for the filling, if you can't find them you can use regular zucchini Smaller pieces are filled whole, larger ones can be cut in half.
To fill seven zucchinis I used:
- 500g of ground beef, from the shoulder
- one carrot
- one red onion
- half a cup of rice
- two cloves of garlic
- salt
- pepper
- thyme
- one tomato
- 100ml of tomatoes juice
- a spoonful of flour
- two teaspoons of ground paprika
When you have filled the zucchini, put the covered pan into a cold oven, set the temperature to 180 degrees and when the oven is hot, simmer for an hour.
Then make a batter and leave the pan back uncovered for another twenty minutes to roast the zucchini and thicken the juice.
