This is a Sanmai (3 layer steel) Soft steel giving support and flexibility to the hard core steel. The Hamon (Temper line that you see) is created when the blade of a sword/knife is quenched in water (or oil) The spine of the blade got a type of clay/mud applied to it so it would cool slower, making the spine softer and making the blade more flexible instead of brittle. Such a knife is called a Honyaki (or Mizu Honyaki when water quenched) Those kind of knives start at around $600, Mizu Honyaki are also one of the hardest to make as the blade can crack, so that's part of the higher price.

I pick up 1 Damascus santoku and 1 nakiri from kamata and 1 damascus chef knife and carbon steel nakiri from tower knife Osaka last month, they have a lot of good quality knives there, I love both places, I had my miyabi knife that I bought from Canada to get them to sharp for me as well and he did a great job.

The shape of the handle is for right handed use. Many companies will produce a handle (and blade for the single bevel models) for left handed users.

Also, your knife can rust too, Shirogami (Whitesteel) is by far a non-stainless steel.

They're LAMINATED steel blades. That is, stainless steel is welded to the carbon steel blade edge.
