Pete, you have no idea! I used my favorite Kerry Gold Salted butter! You must have it with good butter and a cup of tea. So delicious!

Hi there! I attempted the purini recipe.i first made it with regular flour which turned out absolutely wonderful! And it was a hit! My second attempt was with whole wheat flour which turned out to be another hit as well. A quick note:coconut cream works perfectly. Coconut milk makes purini sticky,like fudge. Loved your recipe,your measurements are on par

Isaah, my Teitei used to bake this ,so nice and easy, few natural ingredients that produce an awesome purini. I remember we enjoyed that during Christmas at her place and have red tea,or black tea as they call it here. Sweet old memories, which I hope never fades. Vinkavakalevu lewa Romi ⚘

Hi! You can steam it in a regular steamer on stovetop too. And yes, you can omit baking soda and use self-rising flour instead.

Hi, I made a puligi out of your ingredients and you use less ingredients in your puligi then wat I used in my mine. I used 8 ingredients in my puligi including 1cup water. I didn’t boil my puligi that I used ur recipe but I baked it. Haven’t taste it but I’ll let u know. Thatnks!

You can try with a water bath but the results may not be the same. I’ve only made it in a steamer. I suggest using hot water in a pan under the cake (water bath) and also a pan of hot water separately for optimal steam. Maybe try with a smaller size first? Half the recipe?

You can steam it in a regular pot too! Don’t need an instant pot! If you don’t have a “steamer” you can use just a big pot with a small bowl at the bottom to rest your pan.

Hi Nina! Because of the brown sugar in the recipe, the baking soda is enough for the rise needed in this. If you wanted more of a rise, you could add both, but I haven't experimented with adding both or just baking powder. I hope this answers your question :)

You could warm it up if you wanted to avoid the clumps to begin with. They do melt rather easily though.

You thought correctly, dear. The difference in temperature causes the sugar to harden and warming up the coconut milk would definitely help. Thanks for sharing that tip!

It’s just like making caramel but letting it go a little further - almost burnt.
