If you haven't already, I would highly recommend trying some "specialty" decaf coffee. I have been roasting my own coffee for a few years now. Recently my MIL got told by her doc that she needed to swap to decaf. So after she tried a bunch of store bought decaf and hated it so much I told her that I would try to source some and roast it for her to see how she liked it. Not only did she love it (and that is all she drinks now) I have actually found it quite delicious. If I was some (like you) where caffeine affected me in a negative way I would 100% drink the decaf beans I have been roasting myself! Just my thoughts! :)

Absolutely love the discussion and thoughts around the processing methods. It really reminds me about the topic of image processing. I am a hobby landscape photographer and questions I'll get very often are: "Did you do something to the image afterwards?" Or "What's it really like this?" And although I try to process my images "the way I remember the situation", obviously this is a highly subjective approach. Were is the line? Some people say "only straight out of the camera is natural" but that's just not true. Every camera already applies some kind of interpretation of the information you gather. This is also true for analog photography. To close the circle, where do you draw the line in coffee processing? Every step you take is already an alteration of the original product, from pulping over processing and roasting. There is no RAW or "more natural" way than the other. I mean you are roasting a freaking seed, crush it and than dilute it with water and drink it.How is that natural in any way? So my final opinion on both image and coffee processing is: Do what you want, if you like it and people don't get harmed or scammed. If the coffee tastes like pineapple because you threw in some pineapples into the fermentation process, tell the people what you did and they can decide at the end if that's a product they want or not.

I had a similar experoence about 5 months ago. I was tired of drinking coffee from k-cups at work and I was looking for a better alternative for single cup brewers. I found his series on the Aeropress and since then I've become as he puts it "a little weird about coffee". I found that I was spending as much on commercial grade pods than I would on specialty coffee from a local roasters per cup. I decided to get a hand grinder for portability. I regretted getting the cheapest one I could get and quickly upgraded to the Aergrind by Knock. I wouldn't even have known about the Aergring without it. Now coffee is the hobby I never knew I needed in life.
