@@kght222 I'm decent with only life training but not always consistent really. I've made some things to rave reviews by winging it, and then I can never recreate it that well again. But I try to use his food science to improve.

@@davidmccarthy6061 You know really it’s MOOD that effects our meals. We can learn the science, ultimately how we ‘feel’ about the prep and the process though directs the outcome. Perfection is rare but rewarding, usually perfected through time and experience-states an ol lady lmao 🙏🏻❤️

I just came here to agree so wholeheartedly about the Breville. If I could only have one kitchen appliance, that would be it. I haven't used my gas oven in over a year, and I bake all the time. I also got their hand mixer, and it's the best one I've ever owned.

It was all the rage to wear as many watches as possible in West Africa way back in the 70's. A great status symbol & so much fun. Have never seen anyone wear multiple watches in the US. Made me laugh....thank you so much Elizabeth.

To make the chat slower, before you go live, when you are setting up the title, there is an "Edit" button. Click on it, go to "Live Chat" then just turn on "Slow Mode" It should be 60 seconds by default but you can change it to whatever.

I absolutely love QQ. You brighten my day! It's too bad it's usually at 1:00 AM here but i sometimes make it for the live portion. ps. The Canola oil thing is a bit of a naturalistic fallacy. The hexane that is used to process various oils is not that toxic and the residual amounts in oils are negligible. There's no clinical effect. Additionally it's volatile. So it will likely get out when used for frying stuff. This stuff has been used for a long time and for quite some time we have good clinical data from use of various chemicals in processing so it would be extremely unlikely that naturalistic fallacy would prove true about canola oil. There's not really anything bad about eliminating it from your diet even when it contains some compounds that reduce cholesterol absorption. You can offset that. But this is actually real and verified effect.

Just a suggestion. If you don't like broccoli raw (and who could blame you?) why not just parboil it and the cauliflower just a tiny bit first? Yes it does make for longer prep time but much more tasty results, and you are Alton Brown! You change things to make them better always. Who needs a strict definition of crudite? I don't mean cook them, more like blanch. Just do the work ahead of time and refrigerate. Then they will be well drained and can warm up to room temp while you prep the rest and make the dip. I can't wait to try this recipe!

Hey Elisabeth, love the linen blazer! makes you look like a total boss. If you both are looking for good movies I recommend you and Alton watch The Fall, directed by Tarsem staring Lee Pace (I have to specify as their is another movie by that name which I haven't seen). As a couple of cinemaphiles I think you'll both really love it if you haven't already seen it. It's like if an art film had top notch acting and a really compelling, well written story. If nothing else the camera work and scene direction are jaw-droppingly good.

My humble opinions....CAPERS !! WTF HAPPENED TO THE CAPERS?....next time....equal parts anchovies to capers. Also... Don't parboil the garlic (it'll soften in the simmering) use almost equal parts butter to oil....and just barely process. And always make 4 times more than you think you'll want...it's just the best thing to have on hand for pasta...mushroom raviolis? It's ridiculous. And if you really want to go comatose, slightly BROWN the butter before adding to the other stuff.
