I found this recipe in one of your books several years ago. It quickly became my eldest son’s favorite dish. I’ve changed it up depending on what I have in my pantry & it comes out perfect every time!

Same here! I have used hamburger, sausage and red beans as the protein. All were good, but we like Kielbasa the best, just because of the texture it adds. I bet kids would even eat it with cut up hotdogs, especially on those on a strict budget these days!

I use a 12 inch cast iron skillet and cook everything in one pan. Less dishes to wash.

That looks fantastic! You answered a long standing question of my wife's. She makes a similar dish using sausage and shrimp. The thing is that the rice didn't seem to cook properly. She would stir it half way through and there would still be those crunchy pieces of rice that just wouldn't want to get done. She makes another casserole dish with rice, chicken, french onion soup and cream of celery that wouldn't cook the rice just right. I had never heard that rice wouldn't cook right except in water, but now I know. I will surely get her to try these dishes with 5 minute rice. Love you and your sweet family.

I’ve never made red rice but have made the chicken/rice casserole you speak of. I always use instant rice. Regular just doesn’t cook completely. That’s an old favorite recipe from the 60’s!

Have you ever heard of Thickening Potatoes? My grandmother made them. My aunt, sister and I have tried many times to make them but it’s a disappointment every time. Mamaw used whole red potatoes, scraped, boiled them in water and added cornmeal. She may have had another ingredient but I don’t know what if she did. If you have a recipe I would love it if you would pass it along. Maybe you could make some on your show!! I have enjoyed your cooking shows for many years and have truly loved Quarantine Cooking! I've made this type of recipe with all sorts of rice. Jasmine, Basmati, Brown, etc. all instant or quick, and all come out amazing! Thanks for posting!

In 1977 a friend told me about a new product she'd found and how much she loved it. It was Success Rice, a boil-in-bag rice. So I bought a box and never looked back. The taste and texture are fine as far as I'm concerned, and the convenience is amazing. No guesswork or gummy pot to clean, and the rice cooks perfectly every time in its bag once you determine the exact cooking time for your stovetop or microwave. I cook one bag for 11 minutes on high in my microwave. Nowadays Success Rice comes in various varieties like brown rice, or with additions like quinoa. Never tried those, I just use the regular white rice. I love it served plain with butter, and it's great with dishes like red beans & rice.

Well my husband is from south Carolina and I am from Minnesota where we live so I have learned over the years how to make things from his childhood but he has always talked about red rice and how much he loves his grandmother red rice and I have never heard or really seen anyone with a recipe so now I can make it. This is different from Charleston Red Rice. I've never seen it with that much tomato, the red rice here in SC is drier--at least the ones I've had were.

I'm going to try this with red beans in place of the sausage because we are vegetarians. It looks delicious! I've lived in north GA most of my life and never knew about red rice!! You would think this recipe would have traveled up here from Savannah by now! Well, now it has. :-)

She eats healthier now since she developed type 2 diabetes. She probably doesn't use much lard anymore. It's really bad for you and contains all kinds of bad stuff that will hurt your arteries and heart. Paula has lost a good bit of weight and looks healthier now than she ever has!

When I make a baked chicken and rice dish, similar to a paella it's the rice that's the star of the show. And I always use a Spanish chorizo sausage.

I recommend: Roger Wood Original Lumber Jack Brand Smoked Sausage. It comes in Regular and Hot. This brand is WAY better and less salty than Hillshire. I also boil it and change out the water a few times to take away more salt flavor. I GUARANTEE once you try this Brand... you will NEVER use another again!!
