Kani salad recipe is an easy and fresh Japanese style salad and you can enjoy it as a main course or side salad.
You'll love the bright flavors of this dish and the lovely combination of crunchy veggies and creamy sauce.
Ingredients:
6-8pcs of Crab sticks
1 medium size Cucumber
1 medium size Carrots
1/2 cup Corn Kernel
1/2 cup Japanese mayo
1 tbsp Sesame oil
5-6 leaves of lettuce
Pinch of salt and pepper
Procedures:
1. Cut and slice carrots into 2 or about 3-inch long. Cut into julienne. Do the same with the cucumber leaving the core with seeds to discard.
2. Shred the crab sticks by hand by gently pressing a piece from end to end to loosen the strips and then separate each strip from one another.
3. Drain the water of corn kernel.
4. In a large bowl, add the cucumber, carrots, Kani, and corn kernels.
5. In small bowl, combine lemon juice, Japanese mayo, pepper, salt, sesame oil and honey then mix until well blended. Toss to combine all the ingredients.
6. Serve immediately or refrigerate until ready. Serve on top of a bed of iceberg or romaine lettuce.
