This quick vegan mac and cheese recipe is as easy as it is delicious and takes just as long as it takes to cook the pasta. To speed up cooking, I put the pasta in salted water when it's cold. It usually takes about 14-15 mins total. The easy vegan cheese sauce contains no dairy, no nuts, and no oil and takes just a few minutes to make. The sauce uses rice as a thickener. I always keep frozen rice in the freezer (I make more rice than I need and put it in Souper Cubes to freeze in 1 cup portions).
Step 1: Cook pasta
- 4 cups elbows (8oz/225g)
- 1t salt
- Water (enough to cover pasta by ~1” - I used 5 cups)
Add all ingredients to pan.
Cook on high until the pasta is al dente. (I cover the pan for 5 mins to help the water come to a boil quicker. I then take it off so the water doesn’t boil over the sides.) Stir periodically and start checking to see if the pasta is cooked at about the 12 min mark. It usually takes me about 14-15 mins.
Step 2: Make easy vegan cheese sauce (while pasta is cooking)
- 1/2 cup rice
- 2 cups soy milk
- 6-8T nutritional yeast (based on preference)
- 1T lemon juice (or more to taste)
- 1t salt (or more to taste)
- 2t garlic powder
- 1t onion powder
- 1/4t paprika
Blend everything in a blender.
Cook in microwave for 2-3 minutes, stirring halfway.
Blend everything again to make it super smooth.
Step 3 (OPTIONAL): Prepare any veggies you want to add (while pasta is cooking)
- 2 cups broccoli, cut into small pieces (sub for frozen if you like)
- 1 red bell pepper, diced (sub for frozen if you like)
- 1 cup corn (canned or frozen)
Cook broccoli in microwave for 2-3 mins in a microwave safe bowl with 2T water in the bottom.
Add bell pepper and corn (heat frozen corn up in microwave for a minute).
Step 4: Combine all ingredients and serve
