I LOVE this recipe! I made a loaf today!!! Sooo easy and delicious. I sprinkled a few Quick Oats on top of the batter before popping into the oven. I used Self Rising Flour and added about 2 TBL granulated sugar to the flour. YUM!!!! Hot out of the oven with some sweet cream butter! Perfect. Thank you for this recipe

Okay, I just tried the basic savory bread, using lowfat milk and olive oil. I was thrilled with the results! It made a lovely large loaf with a beautiful golden color, and for a basic bread, it had an amazing taste. I took mine out of the pan as soon as it was done, and let it cool for about an hour. Then, because I live alone and didn't want any of it to go bad before I could eat it, I sliced it and put it in several freezer bags. However, much of it was still warm, and it began to fall apart and crumble. Would you recommend: A. Either letting it cool for a much longer period of time, B. Slice as needed, instead of pre-slicing, or C. Other? I plan on making the sweet version tomorrow. If I get a reply before then, that would be stupendous! Thank you for this recipe. 😁

Great recipe! Made mine with coconut oil and it gave it a sweet and slightly coconut flavor. Just enough to taste it. I'm not a fan of coconut, but this was amazing. How can I make this recipe denser. Like a banana bread?

Hi. I would like to incorporate sour cream in my base QB. Maybe 1/2 cup or so, would this replace some of something or just be additional. I find when ever I use a recipe recipe with sour cream it’s a nicer texture and seems to stay moist better. Thx

If a recipe calls for a tablespoon of baking powder, you’ll want to substitute with a teaspoon of baking soda. You’ll also want to add 2 teaspoons of vinegar or lemon juice to your batter, just balance the liquid from the mixture by reducing elsewhere OR use 1 teaspoon of baking soda, mixed in with 2 teaspoons of cream of tartar if you don't want to add additional liquid to the mix....but that addition of an acid such as the lemon juice, tarter or even yogurt is critical or the bread will taste acidic 😥☺

If you don't add eggs ( eggs are precious cargo in theses times) it is not so cakey you really don't need eggs for bread ordinary bread after all has just liquid.... flour... a raising agent ie yeast,.. Baking powder.... Or baking soda that's it.... so while I think the sweet one is good.. I prefer the savory without egg...

Can you please tell me why my Zucchini Bread sinks in the middle? It gets a kinda crusty around the edges but sinks down in the center. The flavor is good but I'd be embarrassed to share it with anyone. If you know what I could be doing wrong, any response would be much appreciated.

I suspect it's under baked. You can test it with a toothpick, it should come out with only a moist crumb not wet. Also make sure you aren't opening your oven door too soon or too often, as that can make it deflate.

@@BakerBettie I appreciate your response but it was neither of those issues. It actually baked a bit longer than I would've liked & the outter edges were too hard. Also, I watched it through the glass & saw it rising beautifully. Then before it was even time to check it, it had sunk right down in the center. It must be something off in my recipe or the temp of the oven. Those are the only things I can think of. Thank you again for responding.

I'm still able to buy bread but...I suddenly want to make bread! My first try (Irish soda bread with milk/vinegar as a buttermilk substitute) came out dense as a hammer 😅 Thanks also for the weight measurements. I prefer that over measuring cups.

You might have over-mixed it.. It's very easy to do. Or else it was too dry going into the oven. Soda bread doughs are a lot softer (ie wetter) than yeast ones.

@@justme9818 Hey thanks! I think the problem was the amount of flour. I used a measuring cup and sort of packed it in there as I was getting it out of the bag instead of leaving it loosely packed. I plan to use weight measurements in the future or just to be more careful 😁

Excellent tutorial. I actually, successfully, did it and I can't cook at all ! One question, is there any way to make the savoury version moister. It's great with something on it but with just a bit of butter it's a little dry. I used self-raising flour and I was short of one egg. Otherwise followed the recipe slavishly. Yes, you can but you will need to use a replacer. Typical vegan egg replacers such as Ener-G Egg Replacer, Chia Egg, or Flax Egg all work well in this recipe. You can also replace the milk with a non-dairy milk just make sure it is not flavored.

I'm sorry. I don't know if water would adversely affect this recipe or not. Can you get your hands on some instant dried milk? I hate it for drinking, but use it all the time for cooking & baking. Great staple item to keep on hand. Quite inexpensive, too.
