Ghee for frying 2 black cardamin 2 tsp cumin 3-4 bay leaves 1 stick of cinnamon 400g Basmati rice 1 tsp salt 1 tsp garam masala 1 tsp chilli powder 800 mils water or 2X weight of rice

Mums are so precious 🙏🏻 😊 mine passed over when I was in my 30"s how I miss her bright motherly spark in our lives! I have just resettled back in uk from years in Middle East n also miss my lovely friends from India, Pakistan, etc such lovely times we all had n yes sharing recipes was a thing we often did! Well they shared theirs n were not interested at with my bland Scottish fare 🙄🤣 compared to theirs with divine spices n subtle flavours! Love your programme! Sending Hugs to you both!, 🤗🤗🤗

@@FoodwithChetna I made this cumin rice and it was awesome. It went so well with a chicken curry that I made. I've also cooked your chicken pulao and it's a hit all the time with my kids especially my picky eater of a son. He would have 2nd helpings. Your recipes are a success!

Hi! I love your channel and thank you for all the great food inspirations! One question: can black cardamon be easily replaced with green or better leave it out if you don't have it? Same with Curry leaves - curry powder. Always have had this doubt. Thanks for clarifying. Blessings.

Dear Chetna, I absolutely love your channel and yours and your mum's recipes! Could you please make a "complete guide to Indian flatbread"? The differences between roti, chapatti, naans, parathas - including the process of making (if you use your hands to make it or a rolling pin, if they're fried on a dried tawa/pan or fried with oil), type of flour, what to look after and how to server larger amounts and not get them dried out, etc. I'm especially interested in differences between the first two, as the rest is pretty clear for me. I've watched your videos, I've got all your books and I am a long-time fan, but this is what I miss on the internet. All the best, Kasper

What is different in green and black cardamom?

green cardamom is more subtle, and floral / sweet smelling, and therefore used in both savory / sweet dishes. Black cardamom has a stronger flavor with more earthy / smoky notes instead of floral, therefore always used in savory dishes. I love cracking open a black cardamom, it's so fragrant.

I understand quite a lot of what she says, as I have been trying to learn Hindi on-and-off for around 6 years now. Hi William, I have not made this myself with brown rice, yes you can cook it with that but you will just have to keep a close eye on the cooking the first time, I can't give you an exact time it will take to cook.

The flavor would be the same, brown rice will typically take 35-45 minutes to cook. It deceptively does not absorb as much water as white rice even though it takes longer to cook. Therefore follow the package directions after toasting it with spices

That was lovely Chetna, and mum! I'm making your Aubergine Curry and wanted a nice rice to go with it. I'm vegan so will fry my spices in vegan butter. The rice was so fluffy that I will go with the 800ml of water though I'd normally use less. Thanks for these fantastic videos that enable me to learn as I have a penchant for Indian foods
