Cozy dinner. Chicken cutlets and oven-roasted salad. The whole preparation will take you no more than 30 minutes.
Oven-roasted vegetable salad:
250g red canned beans
250g potatoes
250g carrots
250g beets
250g cucumbers
Small onion
Dill and parsley
Dice potatoes, carrots, and beets, drizzle with oil, sprinkle with salt, and bake in the oven at 220°C for 20-25 minutes.
Rinse the beans, dice the cucumbers, finely chop the herbs, combine with the cooled vegetables. Dress with oil.
Chicken cutlets:
Small zucchini
Potato
Onion
500g chicken mince
Herbs
2 eggs
2 tbsp semolina
Salt and pepper to taste.
Grate the potato, zucchini, and onion on a coarse grater. Add the remaining ingredients, mix, and leave for 20 minutes.
Fry over medium heat.
Let the cooked cutlets rest under a lid.
