Recipe for Lemon Lavender Shortbread:
14 Tbs (198 g) softened unsalted butter
(2 sticks minus 2 Tbs)
3/4 cup (150 g) sugar
1 egg yolk
2 Tbs lemon juice
1-2 Tbs lemon zest
1.5 cups + 2 Tbs (196 g) All purpose flour
1/2 cup (96 g) arrowroot or cornstarch
2-4 Tbs lavender flowers
1 tsp vanilla extract or paste
1/2 tsp lemon extract (optional)
Once mixed, chilled and cut, bake for 25 minutes at 300 F or 150 C until edges are slightly browned. Let cool and Enjoy!
