Makes 6 servings
Ingredients:
1.5 cups quinoa
3 cups water or broth
2 tsp bullion if using water
1/2 large onion, diced
2-3 cloves minced garlic
4-6 jalapeños
1 lb ground beef
Taco seasonings (I used 1/2 tsp each of garlic powder, onion powder, cumin and hot chili powder)
10oz can of enchilada sauce
3/4 cup shredded cheddar cheese
Cilantro
Tomato
Salt and pepper
Olive oil
Directions:
Preheat oven to 375F.
Heat a medium size pot over medium-high heat. Dice 2 jalapeños, reserve the rest. Add a drizzle of olive oil and the diced onion, diced jalapeños, garlic and a pinch of salt. Cook until the onions are translucent. When the onions are cooked, add in quinoa, water and bullion or broth.
Bring to a simmer, then reduce heat and cook (loosely covered) for 15 min or until water has absorbed.
While quinoa cooks, add ground beef to a pan over medium heat. Season with taco seasoning and salt and pepper to taste. Cook completely.
Slice remaining jalapeños.
Once everything is cooked assemble the casserole. In a 9x13" pan layer the cooked quinoa on the bottom. Spread ground beef evenly over the top and pour over the enchilada sauce. Top with cheese and jalapeño slices. Bake for 25-30 min or until bubbly.
Top with chopped cilantro and tomato. Serve and enjoy! This keeps really well in the refrigerator and reheats amazingly!
