Today i am sharing gujrati khaman and dhokla recipe ....khaman and dhokla are all time favourite farsan of gujratis
different forms of dhokla are popular in Gujrat.dhokla is mainly made from rice and gram dal but khaman are made from besan ,Non gujrati people are also seen mistakenly calling Khaman as Dhokla or even like khaman dhokla but for gujratis khaman and dhokla are totally different dishes dhokla are made from dal and rice while khaman are made from besan so here i have shared khaman and dhokla recipe with perfect measurement,by follwing this recipe you can prepare same market style khaman ...and traditionally dhokla at home so friends try these two recipe ,follow each step and measurement carefully , you can prepare easily at home so here are ingredients;

khaman ingredients:
1 cup(240 ml) besan / 125 gram
200 ml water
1.5 tsp salt /10 gram
2 tbsp sugar / 20 gram
7 ml peanut oil / 1 tbsp oil
1 tsp citric acid / 3 gram ( limbu na phool)
3/4 tsp baking soda / 4 gram
adding vaghar
3 tbsp oil
1 tbsp mustard
1/4 tbsp hing
4 green chilly
2 tbsp sugar
100 ml water
kadhi ingredients
1 glass water
1/2 glass butter milk
2 tbsp besan
salt to taste
1 tbsp oil
1/4 tsp mustard
2 pinch of hing
curry leaves
chilly
sugar
dhokla ingredients::
1 cup broken rice
3/4 cup chana dal
2 tbsp moong dal
2 tbsp urad dal
2 tbsp rice flex
1/2+1/4 cup curd
water as required
all together grind in coarse /keep in warm
place for 7 hours for fermentation
1 thali dhokla batter
salt to taste
2 pinch of turmeric
ginger chilly
1 tbsp oil
2 pinch of baking soda
water as required
