glass stones are much better than the pro line for wide bevels like that small single bevel knife you have there. the shapton pro is more like a naniwa habiki whereas the glass is more like the chosera. imo. the chosera stones are the best overall. I do like the shapton for lower and higher grits though, the 120, 220, 320 glass are good choices. the 220 and 320 pro are silicon carbide and can grind any steel. the glass finishing stones which are the 6k to 16k are very good as well, maybe better than the choseras in some ways but they are also quite costly. But. honestly the resin based naniwa super stones are the best finishing and polishing stones imo.

how would these work on 'super steels' like maxamet and s110v?

would work fine. Might take a bit longer to sharpen than a resin bonded diamond stone but the glass and rockstars are great for wear resistant and high hrc steels

Shapton say they are not splash and go. They must be soaked for 10 minutes.
