Rabri Dhoodh Recipe
Ingredients:
1 cup of sugar
1 kg milk
2 tbsp custard powder
2 tbsp milk (for custard mixture)
2 tbsp tukmalanga (basil seeds), soaked
Ice cubes
Instructions:
1. Caramelize the Sugar:
In a large pot, melt 1 cup of sugar over medium heat until it turns into a golden caramel. Stir occasionally to prevent burning.
2. Add Milk:
Carefully pour 1 kg of milk into the pot with the caramelized sugar. Stir continuously to ensure the sugar dissolves completely into the milk.
3. Prepare Custard Mixture:
In a small bowl, mix 2 tablespoons of custard powder with 2 tablespoons of milk until smooth and lump-free.
4. Add Custard Mixture to Milk:
Gradually add the custard mixture to the milk, stirring continuously to avoid lumps.
5. Cook Until Thickened:
Continue to cook the milk mixture over medium heat, stirring constantly, until it thickens to a desired consistency. This may take around 15-20 minutes.
6. Cool the Mixture:
Once thickened, remove the pot from heat and let the mixture cool to room temperature.
7. Add Tukmalanga:
Add the soaked tukmalanga (basil seeds) to the cooled milk mixture and stir well.
8. Serve:
Pour the rabri dhoodh into serving glasses, add ice cubes, and enjoy this refreshing drink chilled, perfect for a hot summer day.

1 کپ چینی / 1 कप चीनी
1 کلو دودھ / 1 किलो दूध
2 کھانے کے چمچ کسٹرڈ پاؤڈر / 2 बड़े चम्मच कस्टर्ड पाउडर
2 کھانے کے چمچ دودھ (کسٹرڈ مکسچر کے لیے) / 2 बड़े चम्मच दूध (कस्टर्ड मिश्रण के लिए)
2 کھانے کے چمچ تخم بالنگا (پہلے سے بھیگے ہوئے) / 2 बड़े चम्मच तुकमलंगा (भीगे हुए)
برف کے ٹکڑے / बर्फ के टुकड़े
