As regards how canon any of the extra media stories are: Beyond the movies you basically pick and choose which you'd like to call canon. The Young Indy show definitely is though, Lucas even re edited it in the 90s and removed the show's 93 year old version of Indy with one eye from canon, presumably because he realized Harrison might one day play the role near that age, which shows great foresight to now. Harrison also plays him in one episode set in 1957 I think. So the stories in the re-edited versions are all canon, but the Old Indy segments in the original versions are not. both are up on KZitem, some good restoration projects exist. The re-edits are the longer ones, if it's confusing, they were combined into mini movies and restructured more chronologically. Some characters do return in consecutive stories, Iron Phoenix was meant to be the sequel to Fate of Atlantis the game, and the psychic girl from that series also shows up in the Infernal Machine game, placing them all together in continuity, but that's a rarity. If you were to assume all of the games, books, and comics happened, it's probably a crowded timeline though. Another notable appearance is Henry Jones Sr in Spear of Destiny, though I can't say it's one of the better ones, and he's not very well used in it. But that connects to Last Crusade and contains their thoughts during the ending ride in its prologue. Also the game Emperor's Tomb leads directly into Temple of Doom with its ending, and the games are generally more agreed to have happened than the books and comics (though it seems an awful lot of people for Indy to kill, so perhaps it's not a 1 to 1 reality being depicted.) Other than that, they largely don't connect to the movies, and are designed to be placed only at a rough point in Indy's life by announcing a year, and often no month, and I'd say the more connected to the movies they are, the more canon most fans would agree on them being. It gets more outlandish any direction you go away from the movies, I know the novels involve dinosaurs and cyborg nazis, possibly time travel and aliens as well, but aliens have been showing up in the comics and games since Fate of Atlantis and Infernal Machine, so you decide what you think fits the tone more, that's how most fans approach it.

Check out the others if you like, and I do plan on coming back at some point, probably for Fate of Atlantis and Iron Phoenix, and maybe another story from Further Adventures, I saw one with vampires where Marion returns in a 'weirdest indy stories' video that might be worth a look. But I've got to get to my other long running series in the meantime, I put everything off for Indy Month. I was originally going to do Spear of Destiny for my third story, but upon closer inspection it was just too muddled and confused, and when I read Tomb it stood out for all the reasons I listed in the introduction. It's a shame we didn't get one more series for Dial, but that's just not where marketing puts its money these days.
