*Ingredients for Ragu Modenese:*
- 100g Strutto (pork lard)
- Soffritto:
- 2 stalks of celery
- 2 carrots
- 2 small onions
- 2-3 bay leaves

- 100g South Tyrolean bacon or pancetta
- 100g Cacciatore (Italian salami)
- 200g veal mince
- 200g pork mince
- 200g beef mince
- 500g passata (strained tomatoes)
- 100g tomato paste
- 500ml beef stock (quick recipe from the pressure cooker [here’s the link]( • Hausgemachte Rindersup... ))
- Salt and pepper to taste
*Preparation of Ragu Modenese:*
1. Melt the strutto (pork lard) in a large pot.
2. Dice the vegetables for the soffritto (celery, carrots, onions) and sauté them covered in the strutto over low heat.
3. After 30 minutes, increase the heat and briefly caramelize the vegetables.
4. Add the bacon, cacciatore, and mixed minced meat (veal, pork, beef) and brown everything.
5. Add the tomato paste and briefly fry it.
6. Pour in the passata and beef stock, then let it simmer for 2-2.5 hours.
7. Season with salt and pepper.
8. Serve with pasta and preserve the rest for later enjoyment.
