豆腐冬菇龍躉臘腸膶腸煲
材料:
龍躉腩1斤
臘腸2條
膶腸1條
薑1舊
乾蔥頭6粒
冬菇5隻(已浸軟)
豆腐3磚
處理:
1. 龍躉腩,打鱗,打直1開2,去骨,清水洗乾淨。
2. 豆腐,清水洗乾淨,1開6。
3. 冬菇,去椗,1開2。
4. 乾蔥頭,去皮,清水洗乾淨。
薑,去皮,切片。
5. 龍躉腩,切大舊,放碗內。
6. 預備醬汁:
a. 生粉半湯匙
b. 生抽半湯匙
c. 蠔油1湯匙
d. 糖半湯匙
攪勻。
烹調:
1. 臘腸,預先蒸熟。
2. 大火在鑊內燒熱油300毫升,大火炸豆腐。
3. 豆腐,兩面都已炸至金黃色,放乾蔥頭落鑊炸。
4. 夾起豆腐,放薑落鑊,加入冬菇,爆香,撈起,放碗內。
5. 龍躉腩,加入調味料:
a. 鹽少許
b. 胡椒粉少許
c. 生粉1湯匙
撈勻。
6. 放龍躉腩落鑊,一面炸至金黃色,反轉繼續炸。
7. 另一邊,慢火燒熱煲仔。
8. 龍躉腩,兩面已炸至金黃色,擎乾油,加入豆腐、乾蔥頭及冬菇,同時加入醬汁,炒勻,大火滾起,所有材料倒入煲仔內,大火滾起煲仔。
9. 臘腸,1開3,放煲仔內。
10. 灑上芫荽碎。
11. 完成,可享用。
Giant grouper claypot with tofu and Chinese sausages
Ingredients:
Giant grouper belly 1 catty
Chinese sausages 2 Nos.
Duck's liver sausage 1 No.
Ginger 1 No.
Shallots 6 Nos.
Mushrooms 5 Nos. (Already soaked well)
Tofu 3 cubes
Preparation:
1. The grouper, get it scaled. Divide it into 2 shares vertically. Remove bones. Rinse thoroughly.
2. Tofu, get it rinsed. Divide each one into 6 shares.
3. Mushrooms, cut anchors. Divide each one into 2 shares.
4. Shallots, get them peeled. Rinse thoroughly.
Ginger, get it peeled and sliced.
5. The belly, cut in big pieces. Put in a bowl.
6. Prepare sauce:
a. Tapioca starch 0.5 tbsp
b. Light soya sauce 0.5 tbsp
c. Oyster sauce 1 tbsp
d. Sugar 0.5 tbsp
Mix well.
Steps:
1. The sausages, steam well in advance.
2. Heat up 300ml of oil at high flame in wok. Deep fry the tofu at high flame.
3. Tofu, both sides have been deep fried into golden yellow, put shallots in wok and continue deep frying.
4. Pick up tofu. Put ginger in wok. Add in mushrooms, fry well. Pick them up and put in a bowl.
5. The belly, add seasoning:
a. Salt little
b. Pepper little
c. Tapioca starch 1 tbsp
Mix well.
6. Put belly in wok. One side has been deep fried into golden yellow, flip over and continue deep frying.
7. On the other side, heat up a pot at low flame.
8. The belly, both sides have been deep fried into golden yellow, drain the oil. Add in tofu, shallots and mushrooms. Add in the sauce at the same time. Fry well. Heat up at high flame. Pour the ingredients into a pot. Heat up the pot at high flame.
9. The sausages, divide each one into 3 shares. Put into the pot.
10. Put coriander cubes on top of the pot.
11. Complete. Serve.
