Rajma Masala Recipe (North Indian Style)
Yields: 4 servings

Ingredients:
1 cup dried rajma (kidney beans)
1 large onion, chopped
2 cloves garlic, minced
1 inch ginger, grated
1 tablespoon tomato paste
1 teaspoon cumin powder
1 teaspoon garam masala
1/2 teaspoon red chili powder
1/2 teaspoon turmeric powder
1/4 teaspoon coriander powder
1/4 teaspoon amchur powder (dried mango powder)
1 cup vegetable broth
1/2 cup water
Salt to taste
1 tablespoon ghee (clarified butter)
1 tablespoon chopped fresh cilantro
Instructions:
Soak the rajma: Soak the rajma in water for at least 8 hours, or overnight. Drain and rinse thoroughly.
Pressure cook: Place the soaked rajma in a pressure cooker with 3 cups of water. Cook for 20-25 minutes or until tender. Let the pressure release naturally.
Sauté aromatics: Heat ghee in a large pot over medium heat. Add onions, garlic, and ginger. Sauté until softened and fragrant.
Add spices: Stir in tomato paste, cumin powder, garam masala, red chili powder, turmeric powder, coriander powder, and amchur powder. Cook for 2-3 minutes, stirring frequently.
Simmer: Add the cooked rajma, vegetable broth, and water to the pot. Bring to a simmer and cook for 15-20 minutes, or until the gravy thickens.
Season and garnish: Season with salt to taste. Garnish with chopped
