When it comes time to processing game, even feral pigeons, you want to pick a knife that will do the job and do it well. I usually have a full bucket of them and take about six hours to do them. That is a lot of work and I want a knife that will not add to the misery of the job, but actually make it enjoyable. That means lots of cutting with no dulling, and definitely no hot spots on my hand. That is probably my biggest pet peeve. my dog Bailey eats these things for dinner and loves them. They are good for her and provide just about everything she needs. Plus, being raw, the bones are good for her and clean the hell out of her teeth. Her favorite part is the legs. This job can be a combination of delicate, so as not to cut into the guts, and then brute force to split the carcass and then cut through the neck bone, (not hard at all) and then the leg bones.
I generally do this job with about 4 different knives just to make it fun and interesting for me. This is the first time I had the bright idea to film it so you could see it for yourself. Perhaps you will find this interesting and glean some knowledge from it.
