Interesting. I have an early 70s Epiphone EA-250 MIJ that is almost identical to this guitar. Made in the Matsumoku facility in Japan. Floating bridge and hollow body (except for a quarter inch block under the bridge). More akin to a 330. After I properly set it up, it plays and sounds great, similar to what you have here. Had to shim the neck a good 1.5 degrees and the action is loooow. Like you say, these guitars are great. I also have fat hands and the nut width and fretboard curvature are a little challenging. Another great guitar of this era and Matsumoku facility is the Epiphone ET-270. Think Curt Kobain. Two single coils with vol/tone and a bass cut. A real variety of sounds and plays great. Similar hardware to these guitars but solid body.

You don't mention anything about the pick-ups...curious about them. Also, neck shape?
