Vegan Raspberry Ice Cream
Ingredients;
1 cup aquafaba (the liquid from a can of chickpeas
1 cup fresh or frozen raspberries
1/2 cup granulated sugar
1 teaspoon real vanilla extract
1 can (14 oz) full fat coconut milk, chilled overnight in the refrigerator
pinch of salt
Instructions:
Drain a can of chickpeas and reserve the liquid
In a food processor or blender, mix the raspberries, sugar, and vanilla extract until well combined
In a separate, large mixing bowl add the coconut milk and whip until creamy and fluffy
Gently mix the coconut milk and raspberry mixture
In another clean mixing bowl, add the aquafaba liquid and whip on high until stiff peaks form
Carefully fold the mixed aquafaba into the raspberry coconut mixture until well combined
Pour the ice cream mixture into a freezer safe container
Freeze for about 6 hours or overnight
