🌟 Recipe and Ingredients -
🌟Dough - Take 500 Gram of refined wheat flour, add some carom seeds by crushing them with hands. Add 3 to 5 teaspoon of Desi Ghee as per requirement for giving moyan in dough. Ghee moyan makes things crispy so use it. But you can also use Oil for moyan. Knead a tight smooth dough using water. Let it rest for 10 to 15 minutes by covering it with a wet cloth.
🌟Chutney - Take some amount of jaggery soaked in water, melt it on Gas. Add 1 teaspoon of Kashmiri Red Chilli Powder which will give it a good red colour. Add 1 teaspoon of Raw mango powder and half teaspoon of Black salt. To make it thick , add 1 teaspoon of Corn flour to little amount of water and add this slurry in Kadai. Your chutney will become thick, now garnish some Kalonji (nigella seeds) in it. Your market style Red special chutney of Kachori and Samosa is ready !
🌟Stuffing - Take 2 teaspoon of Oil in Kadai, add 1 teaspoon of Fennel and Corainder seeds, Crackle them in oil, add chopped green chilli and grated ginger to it. Now add half teaspoon of turmeric powder, red chilli powder as per taste, dry coriander powder ,mix it. Now add Green Chana (You can use Green peas or Black Chana also) , add some water and cook it for 2 minutes. Add salt as per taste and some dry mint leaves ( you can use fresh also if available). Add 6 to 7 boil potatoes , meshed with hands. Add good amount of fresh coriander leaves to it. Mix this Masala well , untill the moisture get vanish from potato stuffing. You can see in 3 to 4 minutes your masala will get non sticky to bottom of Kadai, it means its ready. Put off flame and let it cool down.
🌟Now make samosa using dough and by filling this tasty stuffing as shown in video recipe. Deep fry it in hot oil untill it gets crispy. Serve it with green and red chutney. Enjoy the taste of Ratlami samosa !
