We tried your second recipe in a row. I in general does not like Upma but only like the ones which were served during Youth Festivals etc. in Kerala. This came out exactly like that. That milk trick made all the difference. Thank you for sharing!

Secret of a good upma use shallots or sambar onions, crushed garlic little hing ( perunkatam in tamil) some crushed dry chilli flakes. Use boiling salted water.

adding rawa to hot water is mostly followed as you can control adding rawa. incase we are following adding water to rawa then only boiling water has to be added and stirred continuously so that lumps are not formed but chances of lump formation is high on the second.

Only 2 minutes is enough to to fry rava ,how I fry 15 minutes in low SIM any difference will it make

rava has to get slightly roasted, that is the aim so time may vary based on heat and vessel used. so dont worry about that. when it is slightly roasted and you get a good aroma, stop frying.
