12:30 That piece looking like tripe is wheat gluten. The dish is called “水洗酿皮” (Washed Niangpi) , which is made from wheat flour. Some edible alkaline ingredients are added to the dough and the starch of the dough is washed away. The dough then is made into noodle-like food, which is called “niangpi”. The starch washed away from the dough become gluten. The gluten is cut into pieces and added to the Niangpi again.
