Hello Chef Jean Pierre, when you explain the "why" you do what you do with a professional explanation is the reason I have been following you all these years. This video was a great way for us to get review the Thanksgiving recipes you did before. Great Job. Best Regards

This was the best idea Chef did by adding commentary to his existing videos. You said it yourself, you are now relaxed and can explain certain things and/or "fix" a mistake ( but not really mistakes). Please Chef, do more of these! Talk him into it Jack.

The "why" is so important. I'm constantly in awe of how much I know about cooking, and it's because I now know why I cook certain ingredients in a certain way. I can recreate a dish now just from tasting it, no recipe! You're the best, chef!

I've been cooking for 50 years - Your channel has filled in many of the blanks I couldn't learn on my own. It has confirmed many of the things I've experienced, but were contrary to what was on TV or KZitem. Since watching your channel, I have developed my own recipes; taking the "why's" something works and combining them with different ingredients. Happy Thanksgiving Chef.

Can confirm two recipes are must makes - Gravy, Green Beans & Cranberry Sauce - I usually cook for 35+ people when my family puts on Thanksgiving. They loved it. This year, since my wife's family is cooking, I'm taking the cranberry sauce (my Mother In Law loved the test batch I made last year) Bottom line, make all of this. I made the gravy/sauce on Tuesday, all were a crowd pleasure.

A 3+ hr video of Chef Jean-Pierre? Did I die & go to the great kitchen in the sky? This is a wish come true for me! I prefer long videos. The longer the video the more I learn. Also with the longer video you, Chef, won't feel rushed to get things done. To all those who want short videos, guess what, Good Food Takes TIME! I enjoyed this video so much I watched it 3 times. Don't worry about repeating yourself. Repetition builds memory. You give us the "Why"! If I could have made my Mother understand the importance of actually answering the "why," it would have been easier for her to teach me. You have taught me more with answering the "why" than she ever did with the "because I said so." I got such a kick out of you critiquing your own videos. You not only validated your skill, but your honesty & love of cooking. Bless your parents for having you. Thank you for sharing yourself with us. And yes, I remember watching you on T.V. sitting next to my Mom (may she rest in peace) on the couch & asking her, "Why?" as we watched. Happy Thanksgiving to you, your Mrs., Jack, The whole Chef JP Team, & to everyone who took the time to watch, like, & subscribe! Edited for grammar.

Wow! Wow! Wow! I watched the whole 3 hours. I can't begin to tell you how amazing it was. I was taught at a very early age how (I thought) to cook. I cooked that way all of my life. Little did I know it was the incorrect. I also was told "this is the way you do it." So, everything you teach here is not only "how" but "why' and we really appreciate that. I have now learned how and why to do things the proper way and to make not just ok meals but amazing meals by following your channel. You're an amazing man, great teacher and a fabulous chef! Who ever is saying that Chef Jean's videos are too long, are not interested in learning how to cook. They are only interested in criticizing his videos. I love that you explain why you do things because as a young chef it means that I'm always learning something even if i don't fancy the recipe as a whole. It also means I can apply these techniques and processes in my own recipes and become my own skilled chef as oppose to just a replica of someone else. You are special because you don't just teach recipes but you teach how to be a better cook as a whole. I watch every video without fail and take in as much as possible even if I hate half the ingredients and would never eat it just because I know there will be something golden to learn somewhere.

Thanks Chef! I think this was your best video yet. I really liked the format. With making the gravy ahead, making the cheesecake and sauce ahead, prepping the beans ahead, prepping the bacon wrapped turkey ahead, mixing the dressing ahead, the Thanksgiving dinner is going to be amazing this year. Thanks again. After holiday feedback. Made the gravy, the dressing, the bacon wrapped turkey breast, the mashed potatoes, the butternut squash soup, the cranberry sauce, the green beans. Added the Brussels sprouts. Skipped the cheesecake - a guest was bringing dessert. Dinner was wonderful! Company potluck is coming up - I am bringing the bacon wrapped turkey. I am going to roast it on a rack so the bacon on the bottom gets a little more browned. Thanks again for your wonderful lessons and recipes.

Your small changes were really good ones. We did ours about 2 years ago when my husband expanded the house into extra room in the rear of our garage- he built a 7x 8 pantry and bought adjustable shelving from ikea and its functional and beautiful. There are no basements in FL so I needed a place to store small appliances and big things and holiday things. Gravy boats, Cake stands, platters, giant salad bowls, and waffle iron, bread maker, stand mixer, rice maker, pressure cooker, crock pot, roasting pans and all sorts of things that take up space . And then dry food storage- cans, jars, boxes, and storage canisters for flour, sugar, etc. I hit the jackpot when he used Covid to build my new pantry. It’s beautiful & functional.whoever buys this house will love the pantry. So besides my huge laundry under air conditioning it’s fabulous to have this organized 😅pantry.

Thanks for sharing your tips and tricks with us. Especially cooking the stuffing and gravy ahead of Thanksgiving. That is a game changer. We had a great dinner. Everyone enjoyed the turkey, gravy and stuffing. Your videos are definitely not too long. Keep them coming. ❤❤❤❤

Chef, I loved watching these videos again. I'm 75 years old and single. I remember Thanksgiving as a child and my favorite part of the meal was the stuffing inside the turkey. I was moist, full of flavor and delicious to me. I used to sneak down from bed after the family left and see if there was anymore inside the the bird. Why wasn't this overcooked like you say. My memory recalls bread sage and sausage and unknown spices. Can I recreate this?

Please keep the long format. If there are some people who want a shorter version and you want to accommodate them with the short version, great. I learn so much from your videos and love them and you! My cooking has improved b/c of your deep videos ! 70 yrs young and still learning new techniques for my gluten free family. Sending appreciation!
