I can appreciate that the notes may sound off to your western ear, as you put it. They are however precisely where they are meant to be. The “oohs and aahs” in the beginning is the rendition of the raga in which this song has been sung ie Adana raga, with Drupadh style opening (the oohs and aahs) :)
