I just finished my third batch of Kimchi. As usual, it turned out fantastic. Thanks for sharing. Oh and I had made too much sauce so used it on cucumbers and made fresh cucumber kimchi. My friends eat it like crazy and love it. Things are so hard to find in Oklahoma, but thanks to the Korean Market in the next town, I found everything. The ladies were impressed that a man made Kimchi.

I love kimchi but I really can't deal with the smell in my fridge. I had to dump two jars of kimchi because every time I open the fridge the smell would hit me. I tried making it with Korean radish and it wasn't too bad

Xeno Xen maybe you live in a colder area. Try 3-4 days. Or you can taste it everyday until your get tour desired sourness.

thank u for writing me back. my mom like fresh kimchi so i make mak kimchi like every 2 weeks. i love sour kimchi so i take some of the fresh and ferment it for me and I'm slowly getting my mo to eat a little sour kimchi in things like kimchi jeon. i was wondering if you could help me every time i make mak kimchi its not that flavorful and i think its due to not salting the cabbage right. do u have any good methods for salting cabbage for the mak kimchi? i would really appreciate ur help. i looked thru ur videos and i didn't see any for mak kimchi and i really need to make some this weekend i am running out of kimchi and i need it like everyday i can't live without it. oh one more question sorry for asking so many i saw u use the 3 crab fish sauce and i just bought some i was wondering are u supposed to refrigerate it?

jessierad16 Hi Jessie, You are so amazing to make kimchi for your mom every 2 weeks! That's impressive!!! I love sour kimchi myself as well! :-) You will need about 1 cup of sea salt for 5 lb. 1/4 cup for sprinkle direct to the cabbage and 3/4 cup to make salted water(8 cups of water for this ratio. And no, you don't have to keep the fish sauce in the refrigerator, unless you take years to eat it. ;-)

jessierad16 It takes not as long as this quartered ones, but still about 4 to 5 hours. But check if it's well salted by the way how I taught you on the video- if it's bend softly, it's good to go! Of course you need to turn it over during salting to salt cabbage evenly.

hi seonkyoung, i had tried quite a few of your recipes, they taste absolutely gorgeous!! im trying this receipe too, but i couldnt found sweet rice r flours, and replace with glutinous rice flour, and omit the salty shrimp fish and pollack, is that ok? do i need to store in the fridge?

You can use glutinous rice flour, its pretty much same thing so should be fine! You also can omit the salted shrimp, if you don't / can't use it. If you are going to omit the pollack, please use dried shrimp, anchor or dried shiitake mushrooms for the flavor! :-) Please read the written recipe for how to store kimchi, the link is in the description box down below the video! :-D

NenaVip68 No, you don't need the special jars- it's just an old-fashion way to do. As you saw on the video, I stored my kimchi in a plastic bag and then a plastic container with a tight lid. That's all you need. But you will definitely need a room in your refrigerator to store kimchi though!

hello Seonkyoung Longest :) Wanna try this recipe but i have troubles with the ingredients "salted shrimps", i found it in the asian store, it was kinda freezed, costed about 10€ and on the jar is written, once you open and defreeze it, it should be used within 4 days or it will spoil. since i only need a small amount of it.. how do i solve this problem? i don't like to throw food away, is there a way to store it? :) thank you for your help, love your videos!

+nothing to see here Salted shrimp doesn't go bad in 4 days, it might not the right one. But if you can't find Korean salted shrimp, Saewoo-jeot, you can just skip and add extra fish sauce. :-)

hello I have a question, is the rice flour optional or do we really need it for Kimchi? because i watched other videos and some includes the rice flour and some don't. what taste does rice flour bring to Kimchi?

uyen nguyen Rice flour porridge is what makes kimchi ferments properly. It can be substitute with cooked rice or potato(some kind of starch) and it's must ingredients for regular fermented kimchi. I believe some kimchi don't have rice flour porridge in the recipe is more 'quick" version that doesn't need to ferment or 'kimchi salad' type that meant to be eaten as soon as possible.

I didn't grow up eating Korean food. It's something I discovered and grew to love as an adult. I'm a person who prides themselves in cooking just about everything from scratch at home... preserves, ferments, everything I can manage. I started making my own kimchi a few years ago and I've tried a number of recipes. This one is my favorite so far. It's a flavor powerhouse proper time to mature. I put it in all sorts of dishes. My favorite so far is kimchi jjigae with tofu slices. The tofu has this amazing cooling effect with the spice in the stew. It's super yummy in kimchi pancakes and fried with scrambled eggs as well. I don't think the scrambled egg thing is traditional at all, but it's quickly become a breakfast favorite for me.

I just wanted to come by and say that I made this recipe once and I have NEVER had better kimchi. I’m going to make it again this weekend and I’m so excited to have it. If someone doesn’t like this kimchi, then they just don’t like kimchi… at all.

Hi dear ! I compared your receipt with other blogger's receipt and found that the amount of the "korean salted shrimp "and" fish sauce" you use are much more than them, so would that 2 major source amount would influence the taste of the kimchi? I am a little afraid that the taste will super salty and very fishy when the kimchi is made. thank you !

I made this already and it was very good, I am still enjoying this but I was wondering if I could make this with spinach instead of napa cabbage? I like to eat spinach but goes bad sitting in my fridge for too long, so would like to keep it longer and it be healthier. Do you know how well this would taste, texture ok? Has anyone tried this? i still have a leftover kimchi sauce (porridge,ground garlic onion.etc and chili powder mixed) since my veggies are not that much i wasnt able to consume everything, now im wondering if i can still use it like after several weeks? will it affect the fermenting process of my kimchi if i wont be able to use it right away?

Napa Cabbage is the best for Kimchi...sadly, it's hard to find in Msia. We substitute with local or Chinese cabbage. Nevertheless, it's still scrumptious👍😊

My kimchi has been fermenting on my warm counter for a few days, but it's very bitter... a little sweet and spicy but not salty enough. The bitterness overwhelms the other flavour. Did I add too much garlic? Is there a way to make it more delicious?

I love love kimchi. Cabbage kimchi both spicy and white kimchi. Love live green onion kimchi. Love live radish kimchi. Oh man. Made all a month ago. I love the spicy cabbage and green I onion kimchi with ramen noodles also rice. I also made ponr tail kimchi

Wait is it a 2 1/4 cup of salt, or 3 cups?? The directions say differently than what you said in the beginning of the video where you disolve the salt and the water.

How would i know if the kimchi is already spoiled and cannot be eaten? Can I divide the recipe into two because I dont have enough space to keep it in my fridge.. Thanks..

I'm browsing over many recipes and wondered, why some people put rice porridge while some put pear only, and some people do put both. Is it the rice porridge+sugar is an easier version of replacing the pear?

Omg I’m so hungry for fresh homemade kimchi I have jar variety at home right now it’s good but I really prefer it homemade. I love all kinds of kimchi too so much so that my daughter is taking me to a Korean market to buy everything I need to make a small batch of kimchi and more. Thanks for sharing your amazing video.

오늘 선경님 비디오 보고 생전 처음으로 김치 담아봐요!! 생각보다 어렵지 않네요! 미국에서 매번 사먹기 부담스럽고 맛도 별로라서요 ㅜㅜ 이렇게 김치를 직접 담그니 왠지 진짜 한국사람이 된듯한 느낌이 드네요 ㅋㅋㅋ
