Stir-fried beef with peppers and onions, and stir-fried broccoli at home the way it was meant to be done. The flames that result inside the wok, by aerosolization of the oil, produce that highly prized 'wok-hei', lightly charred, flavor in the food that you get in Chinese restaurant food. You can't get that on a kitchen stove because the flame isn't hot enough. Notice I am wearing leather welding gloves to protect my hands and arms.
