Happy Monday Besties!!! I hope you all had a wonderful weekend and are enjoying this beautiful memorial day. To kick off the week, here is a super realistic what i eat in a day video that challenged me to use whatever leftover ingredients I had left in my house until I could get to the grocery store. I actually had a lot of fun with these recipes and loved how they all came out. I hope you find some creative food inspiration from this video and try out each recipe. These meals were so simple, quick and delicious you won’t regret trying them out. Here’s to another week of filling our bodies with great nutritious and delicious foods, showing up for ourselves and showing ourselves/our bodies some grace. I am rooting for you all! Breakfast (Calories 424 | 44 g protein | 38 g carbs | 7 g fat )
(Ingredients)
30 grams of red bell pepper
70 grams of spinach
230 grams of liquid eggwhites
2 turkey sausage pattys
220 grams of baby potatoes
Seasonings of choice (I used garlic powder, paprika, chili powder, and salt/pepper, citrusy garlic seasoning)
(Directions)
Clean and halve the baby potatoes, season and pop in the air fryer for 15 minutes at 400 degrees.
Place two sausage pattys in a lightly greased pan, (if frozen add some water to speed up the thawing process) and cook them until they are heated all the way through and have a nice brown color on both sides.
Weigh out and clean your peppers and spinach. Saute in a lightly greased pan and add your seasonings of choice (garlic powder, trader joe’s citrusy garlic seasoning)
While the veggies cook, measure out your liquid eggwhites.
Remove veggies from the pan, add egg whites and scramble until firm.
Lunch (Calories 330 | 31g protein | 27g carbs | 9g fat )
(Ingredients)
1thinly sliced chicken breast (3 oz)
50 g blackened corn
85 grams of romain lettice
Pico de Gallo
75 g of cucumber
22 g Red onion
45 g Avocado
(Directions)
Clean and chop all of your veggies (romaine hearts, red onion, cucumber and avocado)
Clean, season, and sear a thinly sliced chicken breast. I seasoned it with garlic powder, chili powder, salt/pepper and cumin.
Assemble in a bowl and enjoy
Dinner (Calories 400 | 20g protein | 35g carbs | 8g fat )
(Ingredients)
3 oz of salmon
10 grams of jalepeno
25 grams of avocado
5 to 6 spring roll wrapppers
1 green onion
Gyoza Sauce
(Directions)
Clean and cut salmon into bite size pieces.
Season salmon (I used paprika, ground ginger, pepper, salt and garlic powder)
Sear salmon on all sides until cooked all the way through, and cool
Wash and slice 1 green onion and a ¼ of a jalapeno
Peel and cut ⅛ of an avocado into bite size pieces
Dip spring roll paper into a bowl of warm water for about 10 seconds (it will soften as you go)
Place a piece of salmon, a slice of avocado, jalapeno and green onion inside and wrap like a normal spring roll or burrito
Repeat until all filling pieces have been used
Sear each roll on all 4 sides over medium high heat until golden brown and crispy
Serve with your favorite dipping sauce and enjoy
