Recipe:-
Ingredients:
*For the Sambar:*
- 2 small glasses toor dal (split pigeon peas)
- 1 medium-sized ridge gourd, peeled and chopped
- 1 medium-sized onion, chopped
- 1 medium-sized tomato, chopped
- 8 green chilies
- Pinch of turmeric powder
- Salt to taste
- 2-3 cups water
- Fresh coriander leaves, chopped
- Sprig of curry leaves
- 1 whole garlic bulb, peeled
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon mustard seeds
- Pinch of asafoetida
- 2 dry red chillies chopped
Instructions:
1. *Pressure Cook the Ingredients:*
- In a pressure cooker, combine the washed toor dal, ridge gourd, 1/2 of the chopped onion, garlic, green chilies, tomato, turmeric powder, and cumin seeds.
- Add a sufficient amount of water (about 2-3 cups).
- Cook until the cooker whistles 3 times.
2. *Mash the Mixture:*
- Once the pressure has released and the mixture is cool, mash everything manually until well combined.
3. *Prepare the Tempering:*
- In a large pot, heat 1 tablespoon of oil.
- Add the remaining 1/2 chopped onion and sauté until it turns golden brown.
- Add 1/4 teaspoon mustard seeds, cumin seeds, pinch of asafoetida, dry red chillies and a sprig of curry leaves. Sauté for a few seconds.
4. *Combine and Cook:*
- Add the mashed mixture to the pot.
- Add sufficient water to achieve your desired consistency.
- Add salt to taste.
- Bring the mixture to a boil and let it simmer for 5-10 minutes to allow the flavors to blend.
5. *Garnish and Serve:*
- Garnish with fresh coriander leaves.
- Serve hot with steamed rice, idli, or dosa.
