Cinnamon Rolls
Ingredients For Dough:
Plain flour 350 grams
Caster sugar 50 grams
Salt 1/4 tsp
Butter 50 grams
Milk 180 grams
Egg 1
Instant yeast 10 grams
Method:
In a stand mixer bowl, mix everything together and knead it well with the help of dough hook for 8 minutes. Cover it & let proof for 2 hours at least or until double in size. Knock out the air after 2 hours and spread the dough into rectangular shape, then spread filling before rolling it into a log. Cut log into equal portions and set it into a baking tray with little gap from each other. Cover it with cling wrap and give second proofing for 40 minutes before baking. Now, Bake it at 180C for 15 to 20 minutes. Remove from oven & pour glaze on top instantly.
For The Filling:
Softened Butter 100 grams
Brown sugar 100 grams
Cinnamon powder 1 tbsp
Method:
Spread butter on dough then sprinkle sugar & cinnamon powder on top. Then roll it into a log before portioning.
For The Topping:
Icing sugar 100 grams
Water 150 grams
Cream cheese 150 grams
Vanilla sugar 1/4 tsp
Method:
In a sauce pan mix everything together and simmer it on very low flame until it turns into smooth slurry.
Pour this on baked cinnamon rolls while still hot.

Layered Chocolate Cheesecake
For The Base:
Black cookies 200 grams
Butter 50 grams
Method:
Prepare cake ring with acetate collar. Now Process cookies into fine crumbs then press it into an 8” cake ring pan. Let it sit in the chiller for 15 minutes before pouring first layer.
For The First Layer:
Milky’s Dark chocolate 120 grams
Whipy whip cream 150 grams
Icing sugar 50 grams
Cream cheese 150 grams
Gelatin sheets 2
Method:
In a stand mixer bowl whip cream until medium peaks. Add in cream cheese & icing sugar. Give it a good mix.
Now add in melted Dark chocolate with bloomed & melted gelatin.
Give it a good stir and pour it on ready cookie base. Let it set in the freezer for 20 minutes before adding 2nd layer.
For The Second Layer:
Milky’s Milk Chocolate 120 grams
Whipy whip cream 150 grams
Icing sugar 30 grams
Cream cheese 150 grams
Gelatin sheets 2
Method:
Repeat the same procedure as for second layer then pour this mixture on first layer. Let it rest in the freezer for 30 minutes before poring 3rd layer.
For The Third Layer:
Milky’s White Chocolate 120 grams
Whipy whip cream 150 grams
Icing sugar 20 grams
Cream cheese 150 grams
Gelatin sheets 2
Method:
Repeat the same procedure as for first & second layer.
Let the cheesecake sit in the chiller for 3 hours before garnishing.
You may pour some neutral gel for shiny surface.
